my mother bought me a juicer which I later realized was a centifrugal juicer. (a breville) It produces not a lot of juice from a whole lot of vegetables! I also noticed that somehow it didn't reduce my kale to mush but rather small torn up pieces. So I tried eating it and it was actually quite good-because it hadn't been juiced properly. Now with the celery, ginger and lemon in it, (that is in my morning juice) the leftover makes an amazing salad. Toss a few tomatos in...you get the picture. For dressing I throw on some chili enhanced flax seed oil, a little seasoning and......delicious!
So, I get the juice, toss the remainder in a bowl and then later (well, it makes so much I'm eating it the whole day) I consume the "salad". Note: this does not work with carrots--they juice too well. And yes, I too do not have the mood swings, hunger pangs, I'm more energetic etc. And, I lost 7 lb so far! But, best of all, I can actually see myself eating 'raw' for the rest of my days. the 'real' recipes look so good!
For the meanwhile, I'm just making juice and salad. And the people at whole foods are saying to me, "you sure like kale"!
