Hey guys!!! I just finished preparing my dinner for tomorrow night! Here's what we're having tomorrow:
Marinated Asparagus and Tomatoes
I bought the thin asparagus and placed in a ziploc bag with halved cherry tomatoes. They are soaking in olive oil and balsalmic vinegar and I'll place in the dehydrator tomorrow morning to be ready for dinner tomorrow night
Heart-shaped Eggplant Parmesaen
You can use Alissa's recipe for this but this is what I did:
Slice eggplant and make little cuts to put them in the shape of a heart. Finely chop walnuts and a few cashews and place in a bowl with chopped parsley and Italian seasonings. Dip eggplant in olive oil and balsalmic vinegar and coat with the nut mixture. I'll be dehydrating them tomorrow as well. Top with a marinara sauce.
Valentine's Cake
Inspired by the Black Forest Cake, I put this beauty together in layers. First, I blended a bunch of soaked dates, raisins, and dried cherries and set aside. Then, mashed an avocado with carob powder and agave. Then, made the frosting with ground cashews, agave, (some of the cherry paste) and vanilla. For the bottom layer I used all of the date mixture and the raisin mixture and half of the cherry mixture and added some chopped walnuts and carob powder. The second layer was the avocado/carob filling, third layer was the cherry paste and then poured the frosting over the top. I sprinkled more chopped walnuts over everything and arranged the plate with strawberries and shredded coconut. WOW!!!! It is so gorgeous and yummy!!! I can't wait for tomorrow night!!!!
