Oh there is a vegan kefir recipe in his books??! *just goes to show I am not done skimming through!!*. I have been searching the net to purchase raw vegan kefir and little do I know the recipes are available in Cousens' books!!? I will have a look and will advise should I ever get around to doing it! Thank you for bringing this up misslinda :)

He also touched upon his Ayurvedic medicine background and applied the raw food principles to the three doshas which is something I had been pondering....

I was really excited to hear about it b/c it reminds me of the fermented soybean paste my mother used to make to treat things from burns to stomach problems. Now that I am raw vegan and against soy, I am looking forward to making this.

He mentioned that it takes high quality grains and the book has the sources he suggests.

I will end up buying this book to add to my raw food literature collection.

Kefir Grains--Def and explanation




Kefir grains

While yogurt can readily be made from the lactic acid bacteria present in fresh yogurt, kefir can only be made from kefir grains and mother cultures prepared from grains. The grains contain a relatively stable and specific balance of microorganisms which exist in a complex symbiotic relationship. Kefir grains are clusters of microorganisms held together by a matrix of polysaccharides. The grains include primarily lactic acid bacteria (lactobacilli, lactococci, leuconostocs) and yeasts, and include acetic acid bacteria and possibly other microorganisms. The overall organization of microorganisms of grains is not completely elucidated. More than a thousand years of consumption have demonstrated that the microorganisms in kefir are not pathogenic. Even further, milk inoculated with grains can suppress the growth of some pathogens such as Salmonella or Shigella.

Hello gorgeous misslinda!!

I do have that rainbow book and the conscious eating.... they are like bibles, thick and sitting looking pretty on my shelf :D i will have a read on that particular topic and will share further what i know of it with you and on kefir alright.... give me sometime please!!

ps : we have something in common, we are both geminis and that makes '4' of us in this particular kefir thread!! :p

The only "kefir" I'm interested in at this time is Keifer Sutherland...My Fav actor....LMAO..

OMG!!!! I love him soooo much... Huge "24" fan, plus his movies. I have to say if I met either him or Brett Favre, I know I would be speechless. I've heard he is sooo nice also...thanks for letting me know about that...where's the photo.. :cool:

hey gorgeous! so i read the pages on kefir and only then I realized your question was to 'has anyone attempted the recipes which include kefir'... all along i thought the book would provide instructions on how to make our own vegan kefir... :o

i have made kefir from almond milk, brazil nut milk and sesame seed milk. they all came out great!
i used part water and part coconut water as the liquids and warmed them gently to about 90 to 95 degrees. this is so the kefir will activate. i do not have any kefir grains, so i used a powdered kefir starter that i got through body ecology.
the resulting kefirs were delicious and, after culturing at room temp, they kept well in the fridge for 1 to 2 weeks!

I just got some kefir starter from Body Ecology too but haven't made
it yet. I was going to make the kefir with coconut water. I'll report back.

i love kefir -- it always agrees with me and is great plain or flavored with some fruit. if you do blend kefirs, though, you need to use a low speed so as not to damage the good bacteria.
i also use my nut milk kefirs over granola or a fruit-nut salad -- the kefir culture feeds on the fruit sugars so that any pathogenic bacteria in your gut won't get fed. great if candida is a concern.

yes, i have gabriel cousens' book and used his recipes as a staring off point. this is the technique that i've come up with:
i measure out my coconut water to 2 1/2 cups (if i have a little less, i just use water to make up the difference). then i warm the liquid to about 80 to 85 degrees -- it will heat up a little more in the vitamix. add the warmed liquid and soaked nuts (1/2 to 1 cup measured before soaking) to the vitamix and blend. strain through nut milk bag and return to vitamix. then open 1 packet of kefir starter powder into the milk and blend again ON LOW SPEED FOR JUST A FEW SECONDS. overblending or high speed will damage the friendly bacteria.
pour into mason jar and cover with band and lid. leave on the counter for 12 to 24 hours, gently shaking contents occasionally, if you remember. refrigerate.
the amount of nuts you use will depend on how thick you want your kefir to be. i like it to be drinkable, so i usually use just 1/2 cup.
the amount of time you let it sit will depend on how tangy you like it. just open the jar every now and then (after the first 12 hours) to smell or taste it. it's ready when you say it is!

Wow, thank you for going thru the trouble of typing all that! I'm intending to make my own kerfir. Do you also make fermented foods like sauerkraut etc?

I'm suprised it only take 24 hours to be ready for consumption.

yep, just 24 hours! i do also make my own culture veggies, using another of body ecology's starters called "culture starter". they take a couple of weeks to ferment to the tanginess i like, but they are so delicious and alot more economical than buying pre-made!

Kefire people,

I have yet to make it but recently included SYNERGY raw kombucha and OMG, the part of my stomach that has contribute to soooooooo much of my "asthma" like issues has improved. I can feel the "action" when I drink this! It's normalizing my stomach ph and terrain!!!!!!!

Had an incredible Bm! I can tolerate my foods which I was worried about after fasting...........

I contribute to all the things I have been doing but there was one thing that I knew my stomach was missing......it was hilarious but for some reason I kept craving mushrooms prior to finding this raw synergy and I knew the mushroom craving was leading to something LQQKING around........I followed my intuition and PAZAZZ............... :)

i live in south florida. haven't noticed the product here, but then again i rarely look in the refrigerated drinks section bc i normally only drink water or my own green smoothies. so now i will look for it! if not, the contact info you gave me should help me to get my hfs to order it. thanks!
