Last year I dabbled in the RAW eating lifestyle... but found it difficult to maintain... as I became more and more overwhelmed.
This time around I'm taking it slowly, and trying to make changes that I can handle.
At any rate, for dinner I usually eat a salad with my low fat Catalina dressing (not raw I know). But last year I tried to use olive oil as my dressing, and I just couldn't stomach it. So now this time I have been feeling like I may be ready for a RAW dressing. And today I had my salad with two tablespoons of olive oil (it's a big salad), and you know what?? It tastes pretty good!! I'm shocked! And what's more is that this salad does not have one ounce of iceburg lettuce in it. Nope it comprised of romain leaves, with a lot of mixed greens in with it. Along with red bell pepper (never been much of a fan of peppers), with some sesame & pumpkin seeds as well.
I'm not even done it... only about 3/4 of the way thru, and I am feeling FULLL. I'm taking my time chewing, etc. And it's been a very rewarding salad indeed.
