that's what i'm calling my latest recipe:
1/2 c. almonds, soaked overnight
pulp from 1 young coconut
1/2 c. coconut water
1 large mango
1/2 to 1 c. pineapple
juice of 1 small or 1/2 large lime
blend all together in vitamix.
for breakfast, you can sprinkle on some ground flaxseed and stir in some more chopped fruit like banana or apple.
for a richer dessert pudding: sub macadamias for the almonds (no need to soak), add sweetener of choice, if desired (dates, agave, steevia)
and garnish with shredded coconut and mint leaves/twist of lime
or layer in a parfait glass with berries (not 100 percent tropical but colorful) or chopped mango/banana slices.
