I've read about some of the benefits of eating celery. My problem is I havent been able to find celery that doesnt taste bitter. What causes that? Even the organic celery I have tried is bitter, and it's hard for me to choke it down. I want to start expanding my horizons a bit with my diet, because I feel I am too limited in my selection. I've also heard on another raw vegan board that celery can be blended in smoothies, eaten with almond butter, and goes well with almost all fruits. Has anyone else experienced bitter celery? :confused:

I, myself, do not like celery to eat as is. Never have. It could be that my tastebuds are still polluted or it could be that I just don't like it. I have tried it with almond butter and it was okay but after a few sticks (I cut into small, thin sticks) I couldn't tolerate the taste anymore as the bitterness had began to really shine through. I haven't tried it in smoothies, but I DO like it in juices. When I juice, I add celery and can tolerate it that way. It's especially tasty (at least to me) in a juice of lemon and pineapple.

I usually juice carrot and celery and it tastes a lot better.

The organic celery I can find here in Belgium is pretty good actually, not bitter, I make thin slices and add them to my salads. The white celery is okay to eat raw, the green one is supposed to be for making soup with, so haven't tried to eat that one raw yet...
ps: the white one looks somewhat green as well, but the end (opposite of the leaves) is white, and that's how you know you have the right kind)

I happen to like celery. I never ate it previous to deciding on the becoming a raw foodist. But just last week I bought a bunch and was amazed by how refreshing it was. It's become a favorite.

I've had organic celery that is bitter and non-organic that is sweet. So I still haven't found how to guarantee buying the better tasting celery!

But I do eat it raw. I like it with some almond butter and raisins in the center.

I like celery too... Florida- where I live- is a big celery-grower, so it's easy to get it fresh. But, I find when it's not fresh, it starts tasting bitter to me. Also, the darker green stalks taste more bitter. Celery tastes much better to me when I chop off the ends and soak it in ice water. It's great with fresh nut butters... maybe with bits of dried fruit on top if you eat that. I remember making it like that as a kid- getting the idea from a cookbook where they called it "bugs on a log." LoL

What I've been doing lately is mashing organic bananas and putting it in the celery -- wow, what a treat, it's like eating candy! I swear, it's sooooo addicting! Give it a shot.
