I got my Vita-Prep today.. Whaoo! It is everything I hoped it would be! But, that aside I have been craving tomato soup.. so I thought about it, figured it up in my head and tried this..
4 medium tomatos
1/2 avacado
1 small handfull of cashews
Fresh Basil to taste
a pinch or two of salt
Water for to create prefered texture, I only used a little bit.
I was quite pleased since it is the first raw recipie I've tried out. The texture was great, it looked just like tomato soup made with milk, but the taste was a bit acidy. I was hopeing the avacado would cut some of the acid of the raw tomatos, but it wasn't quite enough. I did cut the other half of my avacado into pieces and eating a piece of avacado then a few bites of soup helped quite a bit. But, does anyone know of any other ways to cut the acid? I love tomato soup, it is such a comfort food for me and to make it raw would be just wonderful!
