I Made a batch of flax crackers & some of the ginger did not get "Pulverized" in my small food processor. so not to waste the ginger, I just thinly chopped & mixed into the batter & placed on tefelex sheets. Woke up this morning & the ginger is green-I think it molded overnight. This has never happened before.
I think I left it on teflex for about 10 hours-could that be the problem? the ginger was fine in the fridge. I've had it go bad in the fridge before, but this was fine & now it's bad. any advise. do I chuck the entire batch of crackers or just pick the pieces that have the large "green" ginger in them? Any ideas. I'm leaning toward chucking it-as I don't want to risk poisoning (could feed some to husband to test...LOL :D
So, any tips on storing ginger. I did a search on the net & found you can freeze..I am trying that right now. Ginger is one thing I buy & never use up fast enough.
Thanks for any help.. :)

I dunno
you may have left the mixture on the teflex sheet too long, stayed moist too long (should transfer it to a mesh sheet after about 6/7 hours, or sooner depending on how thin the mix was spread) ??
and, maybe the ginger was already on it's "way out" anyway (too moist, ginger gone bad) ??
have never had that happen...

I keep mine in the fridge, seems to last forever. Yeah, I believe you can freeze ginger. And you know...I also heard that you can break off a piece of ginger and put in some potting soil, it will root and you can have your very own ginger plant.
Anyone on here ever do that??? Make/grow your own ginger plant???

It is the weirdest thing... I threw the entire batch of crackers out...for fear of food poisening.
The ginger in the fridge seems fine...but I did break some up & freeze it-as I read about that on the net. I also read about planting-that would be pretty cool to have my own plant/root. I would have to keep it indoors as I am in a very Northern-Winter climate...what to do in summer???
I have more seeds soaking & will use a different recipe w/out the ginger. i think maybe it was to long on the teflex...Weird ..HUH...
Thanks for your input...

aw, you're welcome! :)
yeah, it's probably best that you trashed it! you should give it a try again sometime though, the ginger does taste quite yummy in the crackers. OH!! and...for another tip: mince (or grate) the ginger first, then use it in the recipe as normal.
Do let us know if you ever decide to plant some. I really need to try that out myself, maybe this week ;)

I should toss the root I have right now into a pot, it is 'growing' already so it would be a good canidate I think. I'll try to remember to stop on the way home from work tomorrow to get the stuff. I do have a black thumb though, so I'll probubly kill it *lol*
