After you soak nuts the skins come off easily, so I was wondering, do you eat the skins or not? Does it matter? Are there nutrients in the skins?

There are no nutrients in the skin and it makes your digestive system work overtime so skip them if you can.

I've not had the skins come off after soaking. I eat the skins. It's called fiber.

When it comes to raw peanuts, they will have the skins on them. There is no machine that will remove those skins completely with out some heat involved. So if you see some peanuts that are halfed and they have "zero" skin on them, then they are not raw, they have either been blanched or they have had heat applied during the process to remove the skin.

The absolute healthiest raw peanuts are those bought in the shells from the farmers market. I realize they are labor intensive, but this would ensure really raw peanuts. When you shell them yourself, they will have the skins on them. There may be some peanuts that you can remove the skin from, but not all of them, some with a higher moisture content will keep their skins.

So you will have to have some skins on "really raw peanuts". This is why really raw peanut butter has a slight red tint.

Note: I just used peanuts as an example. There seems to be a lot of question over what really raw peanuts are.

But that's what makes eating peanuts fun!

anway, I had soaked almonds and the skin come off easily on most of them and that's what started this question. I ate half with skins and half without.

Ugh, that's not good. I just bought some raw peanuts, I was thrilled... guess what though. No skins. Ahhh well :) Lesson learned!
