View Full Version : Walnut Butter Recipe

This is the reason I bought my Vita-Mix, when it comes to walnut butter, this thing really does the trick.
Walnut Butter Recipe
3 cups walnuts
1-2 tablespoons olive oil
1/2 teaspoon sea salt
Add all the ingredients into the Vita-Mix and start out on the lowest variable speed and then increase to 10, then flip to high. Using the tamper push the walnuts into the blade. You should be able to complete the blending in under 1 minute. Do not blend too long because you do not want to over heat the walnut butter or your Vita-Mix. It will be a little warm regardless, but this is ok, it is not hot enough to destroy any enzymes. At this point, check the walnut butter and taste it, if it needs more oil or salt, you can add it at this point. Do not add any more oil than you have to, other wise you will be able to pick up the taste it in your finished product. You only need the oil for blending efficiency.
I just tasted some of this fresh walnut butter and it is good, the best I have ever tasted. This makes a Vita-Mix worth while. I have made it before with lesser kitchen appliances and it does not compare.

Just a quick question on walnuts... Are they typically raw or do I have to go hunting for a particular type of walnut? That butter looks and sounds good, I get my Vita Mix today, I can hardly wait to use it!

You will want to make sure you get the RAW walnuts. They may or may not
carry organic at the store.
I'm sure you'll love your Vita Mix as much as we do!

Thanks everyone for your replies as always. I realize some of the threads may be "simplistic", but I feel that some people need these threads to inspire them to make the subject at hand.
GlimR, I don't have a specific use for this walnut butter. I just wanted to create it for "stock" so that I can grab a big spoon full of fresh walnut butter as a quick healthy snack. Celery sticks with walnut butter sound good though.
I am also curious to see how long it will last. I have it vacuum sealed and it has salt added, therefore, I assume it will last for a while in the refrigerator. I will leave some in the jar and perform an experiment and let you know how it turns out.
I would like for someone to remind me in a week or so to check the walnut butter. I know that a big question on here is how long do fresh raw nut butters last. Well this will be a "RawFoodTalk" research project and we all can follow along.

Samuel, can it be done with soaked walnuts, or do they have to be unsoaked? Which did you do?

exurb, I do not soak them. Honestly, until I got the Vita-Mix, I was not happy with the outcome of any of the nut butters. I mean they were ok, but not that smooth SAD consistency. Now, with the Vita-Mix, I can make SAD like nut butters.

I've not tried walnut butter ... as soon as I'm off my water fast, I'm going to give it a go!!! I've been using my food processor to make almond butter -- but am going to give the vitamix a go instead.

Sorry, I ate it all. However, I ate the last of it on Friday, February 10, 2006 and it tasted just as fresh as the day I made it.
So, in my opinion, if you vacuum seal nut butters with a little sea salt and you keep them in the refrigerator, I would assume they could last 2-3 weeks with no problem.

David picked up 3-4 hundred pounds of fresh black walnuts this fall, de-husked, washed and dried them. We are now in the process of cracking them and I have been wanting a good way to create a walnut butter out of some. Thanks so much for posting that recipie.

you can use the husks to dye rather sad but lovely grey/black if you are into natural crafts as well.
