I just had to show off a bit here as I don't take many food pics.

Tonight I had a delicious dinner that consisted of Alissa's Salsa, Alissa's Nacho Cheese (not dehydrated), Corn-Flax Chips and Refried Beans.

Now, the Refried Bean recipe wasn't Alissa's as hers calls for sprouted chickpeas and I had none...so I used a recipe I found on the web as follows:

Refried Beans

Two cups of raw sunflower seeds, soaked overnight, which then = about four cups. (I made this spur of the moment so I didn't soak, but I ground dry seeds in the coffee grinder and just added water to the mixture to desired consistency)
1/2 cup flax seed oil (didn't have any, so I used olive oil)
3 Tbls. of raw nut butter or tahini (I used a little of both)
1 tsp. sea salt
3 tsp. cumin (key ingredient, don't even try it without!)
2 tsp. chili powder
1 Tbls. raw apple cider vinegar

Throw it all in the food processer, adding a bit of water as you go along until it is all smooth.

The meal was very yummy and satisfying! Anyone who thinks that eating raw foods is about feeling deprived...think again!!

WOW!

With this Super Bowl weekend coming up, i almost feel obligated to include this after looking at those pictures!! I already have a plan for what i'm going to prepare, but i may have to reconsider!!
I don't even need you to tell me how you was tearin' that thing up! lol..

It was definitely good! But as good as it was, I didn't eat much of it because I wasn't very hungry to begin with. But I made it "just in case" because I get the late-night munchies so that'll defintely hit the spot later on!

Rawk,

I pulled up your thread to see the picture and my 3 year old was standing right next to me.
He saw the picture coming through and said, "Yummy"! I laughed and said, "Do you think that's yummy"? He said Yes!
So, I guess I've got to give these recipes a try, I think he'd love them!

Just thought I'd share with you what my 3 year old said about your food pics! :)

Rawkinlocs, That looks so good & great for this weekend !!! I love to make the nacho cheese & dehydrate, but I think it looks better as a "dip". You are so right that anyone who thinks we are deprived....NOT !!! Thanks for sharing & I will def try the refried bean recipe. :p :p

Rawkie, your pics are wonderful. Do you think the refried beans would be alright without the acv? I got away from that once again and really don't want to go back. If you think it needs a little acid do you think lemon or lime would work? I have really missed refried beans. Actually I have everything else except the nut butter, will have to give it a try. Nothing to lose. That and Samuel's pesto veggies are giving me an appetite. Will have to wait till tomorrow.

Lana, I've never had it dehydrated, maybe I'll try that next time or dehydrate any leftovers!

Doe, I think the refried beans would do just fine without the acv...yes, use lime juice instead. I know that in Alissa's recipe she uses lime juice.

Looking at the pic again, I now realize I was missing souraw cream! :( Ah well, next time!

Rawkinlocs, I cannot wait to try your "Not-yo" chips recipes. I have always dehydrated my nacho cheese recipe because I could slice up the cheese & freeze for later use. I made a chile conqueso dip out of it the other day. I've posted a thread for all you Tex-Mex fans out there. Adios..... :D :p

Hey that looks great! Actually, I'm going to make some tortilla chips myself. I soaked the flax but put it in the fridge and forgot to make them. They've been in there for 2 days. Think the flax is still good?

Oh my!! i am floored!! totally sinking here.... melting just like your gooey cheese.... that hand in the picture is really enticing me.... am I hallucinating? i can only imagine the taste.... good food-work Rawkinlocs!! and thank you so much for sharing. Like you said, it has of course definitely driven the point of raw diet not being a deprived one. Especially not so when you have talented people, like you and many others in this forum to give encouragement, support and share their results to someone like me.

Thanks everyone for the responses!!

The corn-flax crackers are actually the corn tortillas in Alissa's book with some minor modifications such as, I added ground oat flour and used like half the amount of ground flax the recipe called for. I also added some cumin and chili powder to them and let them dry to crackers rather than soft tortillas.

Lana, I saw your conqueso dip and it sure looks yummy!j

Beanie, the flax seeds "should" still be okay, but smell them to see if they smell weird or sour to make sure! But I think they'll be fine as long as you go ahead and use them.

Why, Not-cho(nacho)-cheese of course! :p

I got the triangles by using a tip someone here on this forum gave (sorry...can't remember who to give proper credit) using kitchen utility scissors to cut them. I usually wait until the crackers are half-way done and ready to be flipped over onto the mesh tray and then I cut them into desired shapes be they triangles or squares and then put them on the tray to dry the rest of the way.

Rawstrawberry, are you talking about the raw soulfood uncook book? I don't know...we're still working on recipes but there seems to be a demand so we'd really better get crackin'!

Rawkinlocs, Made the refried beans & served w/flax chips & salsa & it is the BEST refried beans recipe ever!!! My Husband loved it !!! Definitly going to be a staple at our house. Even looks like the sad version & the texture is "mucho perfecto."..LOL

just made the refied beans gonna let it sit and marinate and not eat until this afternoon so next is the cheese I want that to sit also let all the ingredients mix together. I find that when I make most of these recipes that it always taste better the after it has sit for a day or so. so I like to make things early and let them set before I eat them.

All I can say IS OMG!!!!!!

I just ate some of this with the Nacho cheese from Alissa's book YUM!!!! That cheese reminds me a a cheese spead my mom use to buy it taste just like it. I put some of the cheese in the dehydrator to try it like that also later.


I didn't have any raw chips so I use some corn chips that I get from the health food store that are baked and used cold processed oil and sea salt. I guess now I have to start making cornchips. :D

Honeybee, this is the nacho cheese recipe from Alissa's book. But I didn't dehydrate it, I just blended it REALLY well (didn't have a Vitamix back then) with my blender until I got as smooth and creamy as I could. I think the recipe calls for mac nuts (?)...either way, I used cashews and I added a little bit of jalapenos to taste (without the seeds and membrane!) to make it spicier.

I have some nacho cheese in the dehydrator right now. Not sure how it will come out in the dehyrated form, but I LOVE it as a sauce. Daughter didn't like it though. Said it tasted like coleslaw. I fail to see how she came up with that. Tasted very cheesy tome. Next time I will put in some hot peppers because I do like my stuff a bit on the spicy side. Yum!

Update on this. I checked the dehydrator to see how it was doing and daughter came flying in. She tasted the partially dehydrated mix and said that she loved it. I think she is just one of those kids who automatically responds with a "yuck" when tasting new foods. Often she will like them the second time around.

Natcho cheese looks great. H ave to figure it out but patiently waiting.

My firend send over a Chad Sarno recipe--another great chef for chips so posting it here. I'm not a corn lover in chips but not sure what will replace it. I can say these chips he brought to a rawluck were great.

Sprouted Corn Chips--Chad Sarno
This is a great recipe for any fried chip addict, a wonderful snack with guacamole and salsa fresca.
Makes 4-5 trays

1 c golden flax soaked 10-12 hours
1 c almonds soaked 10-12 hours
3 c fresh corn kernels shucked off cob
1 c yellow bell pepper, seeded and chopped
2 T onion powder
1 T cumin seed ground
2 T dried oregano
1 ½ T Celtic sea salt

In food processor, process all ingredients in batches for optimum texture.

First blend the soaked flax until as smooth as possible, place in mixing bowl and set aside. Proceed by processing the soaked seeds or nuts until finely pulsed consistency. Continue by also blending the corn and peppers until finely minced along with dried herbs, spices and salt.
Hand mix all ingredients well thoroughly.

On dehydrator teflex sheets, spread cracker batter evenly about ¼ inch thick.—spread very thin!
Score with rubber spatula to desired size and dehydrate at 110 degrees for 12-14 hours. Half ways through I recommend flipping the crackers a more thorough drying process.

Store in sealed container for storage.

I found the Natcho cheese recipe and others I posted from gogreen.org neewsletter.

NACHO CHEESE RECIPE--Alissa

Serve in slices on sprouted-grain crackers or break it up over salads.
For spicy nacho, add jalapeno.

2 cups macadamia nuts, 1-1/2 cups red bell pepper, 1 cup orange pieces
(about 1 orange), 4 cloves garlic, 1 lemon juiced, 2 Tbsp Bragg Liquid
Aminos

Same as Swiss Cheese - blend, dehydrate, flip after 5 hours. If Bragg
is not in your health food store, I'd use 1 Tbsp Soya sauce in place of
2 Tbsp Bragg.

Are you talking about flax seed oil?? I always find the flax seed in the bulk bins at the HFS. Good luck.
