I just want to announce......that I had my first baby coconut! I need ideas for my other 3. With this one, I made a smoothie.
You all are right - it was incredible.

Coconut Shake
For the almond milk:
2 c. water
1 - 2 T. honey
1/2 c. almonds
Blend and then add:
the meat and water from (1) baby young coconut
1 heaping tsp. cinnamon
1 tsp. vanilla
2- 3 T. maple syrup...to taste.
8 ice cubes
Blend till smooth!
Makes 2 large servings!

I am originally from Barbados and we have different flavors of coconuts than the ones you find in asian markets. I find that the Asian coconuts are soooooooooooooo and i can keep going on the ooos because they are good.Oviously I don't have access to the ones in barbados but I do in the summer via mexico they have the same flavor coconuts that Barbados does. My point is that coconuts rawk even the Fresh old ones taste great, less water and harder meat but stii good.

Is a baby coconut the same as a sweet young coconut (white outside)?
I just bought two sweet young coconuts (white outside) from the store... I have NEVER, ever in my LIFE had something so wonderful. I have seen these before and never bought one! First of all, I must have gotten 10-12 oz of water from this little guy! Oh, and the meat... SOOO tender and SOOO sweet. I am hooked on these things!!!! Oh... now to explore recipes!!!

Oh my gosh Pansy, that smoothie is SOOOOOOOOOOOOOOOOOO good. I am amazed that you can take those ingredients and come up with something so delish, and good for you too?!? It is boggleing. Thank you so much for posting it. This is the first raw smoothie I've had, or really recipie that I've made. Hmm.. good!

Rawadventures.....I don't think they are the same...the baby young will say Thai baby young coconut and they are so sweet.

Scoopout the flesh (if it's thicker), slice into long thin noodles and use as pasta! Yummy!

Rawadventures,
I made my smoothie with the white young coconut I got at walmart of all places. It worked out just fine. Quite yummie :) I'm still in smoothie heaven. Had two big glasses and put the rest in the fridge for later. I think I"m going to try adding some strawberries to it just to see what it tastes like.

yea the young ones are white with soft jelly inside. you will automactically know the old ones. They are the ones with the hard cruchy white insides and the brown hariy skin.
Any more recipe ideas?
I just made the smoothie. My family loved it. Thanks!
