Ok, here we have it folks. Some pesto stuffed portabellos, pesto stuffed large cherry tomatoes and my famous pesto stuffed red chiles all fixing to go into the dehydrator. I marinated them in Alissa's Ginger Vinaigrette. They sure smelled good in the dehydrator.

Hi Samuel. I noticed from the picture that it looks like you have an American Harvest dehydrator (???). I have one too. Is yours pretty loud? Mine sounds a bit louder then when I first bought it, which was just a month ago. And I haven't used it very much. Maybe 5 or 6 times I'd guess. Just wondering if I should return it, or get a replacement while I can (at Walmart).

By the way, the veggies look yummy! Is the pesto very good with reduced amount of oil in it? Have you tried it that way (or anyone else?!)? I'm watching my fat intake, but one of the recipes I really like is pesto stuffed mushrooms.

Samuel, Great ideas, look yummy..." Pesto stuffed mushrooms" are still probably my fav. I ran out of mushrooms once, & cut up some zuchinni, de-seeded & then stuffed & dehydrated. They were good also. I think Alissa's recipe for "pesto" is so good you could use it on anything....except ice cream...LOL :cool:

I did pesto stuffed tomatoes last weekend when I ran out of mushrooms. Very tasty.
I also made Alissa's cannoli and was really pleased that they looked exactly like the picture. Quite sweet but I need a healthy sugar fix at work today.
Samuel - please keep posting photos of your creations as they are really inspiring.

Karen, yes, I have the same dehydrator. It is not really loud, but it is not quiet either. I have just been waiting until I get more into dehydrating before I buy an excalibur. I keep debating this dehydration issue. So until I am stable on my views regarding dehydration, I will stay with this model.
You have nothing to lose by exchanging it at Wal-Mart, it will cost you nothing to try. Just be firm and if they say they can't replace it, say something like "You have not heard the last of this". Statments like this usually mean unstability and tend to get more attention.
They are very heavy, but this is good in a way. This is a great food to keep you raw when you start craving heavy foods. I haven't tried them with less oil, but you know what, I think they would do fine with less oil. I think you could reduce the oil in half and they would come out fine. I wouldn't be too worried about fats as long as you are using EVOO.

Those nice big cherry tomatoes stuffed with pesto were very good. They should be called "Pesto Tomato Poppers". They are the ones that kind of resemble button mushrooms in my original picture.
Oh, I forgot to mention, I added 1 jalapeno pepper, 2 serrano peppers and 1 orange habanero, all with seeds. Can you believe it was not hot? I forget that heavy oil suppresses capsicum in peppers.

I think you've inspired me to take pesto stuffed thingies to the raw food potluck on Wednesday.
Do you have to dehydrate them? Or are they good just raw? I think I'll do tomatoes and mushroomies.

RowanC, the pesto stuffed red chiles are tastier if you dehydrate them. They are more like SAD stuffed peppers.
A tip on the tomatoes, do not leave them in the dehydrator too long. Just long enough to get the job done. I would say 2 hours is plenty on the tomatoes.
Oh, and the button mushrooms come out better than the portabella mushrooms. They just have a better flavor. The portabellas have more of an earthy flavor compared to buttom mushrooms.

I just got my dehydrator and I think that pesto stuffed mushrooms are my favorite. I toss a few pine nuts on top for decor and a little crunch. I can't wait to try some other veggies.

Just put another fresh batch of Pesto Stuffed Red Chiles in the dehydrator. I really like these. This time I added 3 orange habaneros to the pesto. I mean business this time.
