are kalamata olives raw? They are in oil and sitting out in a self serve barrel.

leeleelocs, the olives you see in the store in oil and sitting out in a self serve barrel are not raw.
Kalamata olives themselves are raw, it is just the process they go through before they wind up in that barrel that makes them not raw.

If anyone has olive tress, they're fairly simple to salt & preserve. Email me with your snail mail addie for instructions.

RowanC in this part of the country we don't have olive trees, but thanks anyway.
