View Full Version : Substitute for Almond Milk?

Aaaahhhhh - I'm all excited about whipping up Alissa's Corn Chowder for dinner tonight (I have a new "thing" for raw corn along with the honey mustard dressing) but i completely forgot that I need almond milk. :(
Is there any substitute I can use, or shoujld I just wait until tomorrow night and soak the almonds tonight?

Part of the joy of this type of cooking for me is inventing new recipes. If it was me, I'd try some other nut, like cashews, and go ahead with the recipe just to see how it turns out!

Apples, I often make corn chowder without almond milk. You could do a variety of things, blend and strain some more corn for a "corn milk", a bit of celery juiced or pureed, a little white part of a green onion or some leek, a bit of sweet red pepper, whatever to make a yummy creamy "stock". Then just spice it up. It's great - I actually make it more often without the almond milk than with.

My problem is that I have no nuts soaked. I DO, however, have red pepper and celery - maybe i can puree that with some water and add some cashews in? Or just add some more avocado?

I remember reading in Alissa's book that while it is most optimal to soak the nuts first, don't let that stop you if you're in a crunch! But if you don't want to use unsoaked almonds (and I'd totally understand why) then just do a cashew milk OR as you said, use cashews IN the chowder along with some water and the rest of the ingredients.

Thanks Rawkinlocks (BTW - i adore your username!). I have no problem using unsoaked nuts - i actually think they taste better that way (naughty me!). :) I might do half almonds and use celery and red pepper as the other half.

IMO If you have extra corn, incorporate that as a main component of your juice too, it makes it creamy/milky. I actually prefer it without the almond, but that's just my personal taste, wanting to really taste the corn. Charlie Trotter and Roxanne Klein's book Raw does a corn soup with just corn pureed with water in the Vitamix then strained, and celtic salt added. Then they add corn kernels, garnish with hearts of palm, and curry oil.
I read in a cookbook today that you can add water to almond butter to make a milk.

Where do you buy raw almond butter? I looked at every jar of almond, and cashew butter at Whole Foods yesterday, they were all roasted. :( I can't even find any raw tahini. Do you buy yours on line?? Thanks. :)
