I've been experimenting with salad dressings and this one is adapted from a recipe in "The Streamliner Diner Cookbook." It is really good served over mixed greens!
1 avocado
1 cup chopped fresh basil
zest and juice of 2 limes
1/4 cup apple cider vinegar
1/2 cup water
1 tsp. salt (if you use this, I leave it out)
1 tablespoon honey or agave
Combine the avocado and basil in a blender or food processor and blend until creamy. Mince the zest and add it and the remaining ingredients to the avocado mixture. Blend again until creamy. Makes about 2 cups.
