Here are my Pesto Stuffed Red Chiles, no dehydrator used. These are very tasty.

Scrumpcious! do you remove the entire inner part of the chiles so you just a shell? your own recipe ifsocan you offer it?

Pesto Stuffed Red Chiles

1 recipe Gus's Pesto (Page 309 of LIVING ON LIVE FOOD (http://www.alissacohen.com/books.html))
Fresh Red Chiles (at least a dozen)

Cut a triangular section out of each red chile to create little boats. Be sure and remove all the seeds and the membrane. Then fill with Gus's Pesto. The pesto requires pine nuts and basil obviously. For the exact recipe, refer to Alissa's Living on Live Food.

oh Samuel they're gorgeous!! They look divine!! Yum!

What kind of chiles are those - they look a little like a properly ripe red jalapeno, but the shape looks a little different. I love red chiles!

Those red chiles you see in my pictures are red fresno chiles. They are hot, but not too hot. You can eat them with out any problem, just be sure and seed them and remove the membrane.

A little interesting fact, the red fresno chile is the famous chile you see pictured in the logo of Chili's Restaurant.

ooh, never tried a red fresno. They look "cuter" in shape than a red jalapeno.

karenisraw, I like any recipe with hot red chiles, they are the icon food of my life. Also, per the instructions from my Manly Manual, Volume 7, Chapter 156, pages 8,916 through 8,925, it informs to constantly remind everyone of the hot foods I can eat. This is important, because this lets everyone know I am a real man.

exurb, the red fresnos are the photogenic red chiles. They are just very appealing to look at.

RowanC, thanks for the compliments. As far as making cilantro pesto, ehh, I don't know about that. Pesto isn't pesto with out basil. Just my opinion, but I would be hesitant to try it.

Also, What Rowan said regarding Cilantro, I found a recipe & was going to use Basil instead of cilantro- (very ingrained in me that pesto is basil) but I liked it w/ the cilantrio. Here's the link...

This is Carrot & Parsnip Fettuccine. I got the recipe from the following link:

This is another great Raw food site. Alissa is on it!!!

I adjusted the recipe a little- I marinated mushrooms as directed-added some thinly sliced onion- 1/2 small

For the pesto, I added a lot of cilantro-probably a cup (I just kept tasting until I thought it was right) & I added a Red Chile Pepper (Red Fresno). We like spicy foods.

This was sooooooo good. We even thought it would be better after it sat-& a great dish for potlucks, non-raw dinners, & even traveling or lunches. Enjoy...

Oh boy, oh boy, oh boy... Samuel Wilson, this looks soo scrumptious. I guess I know what my next yummy treat will be. My mouth is watering just thinking about these. I am going to the store today... definetely have to make these again and use the red fresno peppers.

Aisah, I haven't been able to wear hemp clothes or jewelry, so I am afraid to ingest just yet. I really want to though. If anyones knows the difference between wearing & ingesting "hemp seeds", please advise, as I may try Alissa's brand.

I love the style of hemp clothing & jewelry & actually sell it in my boutique, but I break out in a rash. :(

Sorry Lana I do not know if there would be any difference in wearing & consuming hemp products. I am sorry that you broke out in a rash by wearing them. Maybe you ought to start a thread on this query.

Oh, I didn't mention that I decided to put these in the dehydrator. You probably figured that out already, since they are on a dehydrator tray. Well, I just sneaked a few (about a dozen actually) and they are very good. Nothing beats fresh red chiles. After the the sit in the dehydrator for a while, the oil from they pesto is drawn into the peppers and they soften up a bit. They taste just like baked stuffed peppers to me. They are better though because these are packed with enzymes :)

I am quite full now :(

These look great. I have all the fixings to make the pesto... now need to find the chiles and I am set!!!
