Hey Cherie,

Do you mind posting that rice replacement idea here. It was some type of vegetable that you said after it is dehydrated, has similar texture to rice.

I tried to search it but couldn't find it. :)

Hi Linda,

I don't really recall mentioning anything like that except for the parsnips and pinenuts (which I made reference to in the thread SamuelWilson linked you to).

However, I may have at one time also mentioned whole oat groats when soaked have a texture similar to rice IMO. The thing is, I had been using the oat groats from the co-op and it's been said that they're not really raw so...that would be up to your discretion to use or not to use.

I made another batch of chili this past weekend and to it, I added some soaked whole (not steel cut) oat groats and honey, by the time it had warmed in the dehydrator and I sat down to eat it, that chili tasted like it had rice in it due to the oats! It was very delicious. I had also seen here I think it was Todd (tglasco) who said his wife had made a "fried rice" type of dish using oat groats and I had tried that once and concured that it was very "fried rice"-like in texture and taste (esp. once all the seasonings, etc. were added).

So, perhaps that is what you may recall having seen me refer to (?) I even did a search on "rice" using my name as the poster and I didn't see anything about dehydrating something to get a rice-like texture...so I'm not sure.

you know Cherie, i just remembered veggiegirl had started a thread on kim chi and there it was.......apparently my memory is not as polished as I thought. Your right, it is the parsnips and pine nuts!
