We store a lot of organic veggies we grow at our place, and I have lots of beautiful heirloom squash. They are the hard, "winter squash" type, like a butternut in taste and texture, but the shape of them doesn't allow them to be spiralized, so I can't make pasta.
Any ideas and recipes appreciated!!!

You can make fettuccini out of them. The 3 nuts you will need to make the alfredo sauce are cashew, mac and pine. The rest of the ingredients you will probably have on hand.

Thanks, I've made those recipes Samuel, yummy, but the shape of my squash doesn't let me spiralize them into pasta (they're not butternuts, they just taste like them, they have awkward shapes and I haven't been able to cut them to work in the spiralizer).

Why not make some soup? Or even some kind of dessert. Pulverize them and use them in wraps. Whatever... Let your imagination run wild :)

thought........could you blend it with some coconut milk and add honey & cinnamon for a nice creamy soup or thicker for custard like texture.

exurb, you take a veggie peeler and make wide pasta strips as you peel the squash. You do not need the spiral slicer to make the fettuccini noodles.

Someone here (can't remember who) gave Alissa's Butternut Squash Patties a rave review. I haven't tried them yet, but that's a suggestion.
Also, oh nevermind...that was YOU who made the squash pie :D
