I love cilantro, what a good idea. I don't have a recipe but I would say..
Cilantro, lime, ...Duh.... & olive oil, some garlic, celtic sea salt & a little apple cider vinegar. I would add cayenne-but that's just me :D
I would just experiment w/these ingredients...hope that helps..

Simple Cilantro-Lime Vinaigrette
1/2 cup olive oil
1/2 lime juice
handful of cilantro (leaves only, no stems)
Chop cilantro leaves with a food chopper (or knife on a cutting board). Add the 3 ingredients and stir to distribute. You take away from the beauty of the recipe by blending it into oblivion. However, if you must, you can blend it.
I make this cilantro lime dressing regularly:
Whisk or blend together:
lime juice
flaxseed oil
honey or maple syrup
salt
black pepper
ginger
tiny bit of miso (if you want more miso flavor, omit the salt)
Then stir in a big handful of chopped cilantro. Sorry I don't have exact measurements...I just adjust it for taste.

Here's mine;
2 cups cilantro
juice of one lime
1 tbls agave
2" peeled cucumber
1/2 cup sprouted pumpkin seeds
1/2 cup olive oil
3 cloves garlic
jalapeno to taste
Vita mix to blend....add some additional chopped cilantro if you want a little texture...we like it smooth
