View Full Version : Shaping Alissa's Burger Buns

I'm going to have a go at making Alissa's Burger Buns this evening. I've got my buckwheat all spouted (my first time sprouting anything - aren't they cute with their little tails?) and am all set to start my flax seeds soaking before I head off to work.
My question is: when I shape them into burger buns shapes, do I make them as whole buns that I would slice in hal when I sue them, or do I shape them into separate top and bottom halves?
I made the carrot pecan burgers over the weekend - and wow! Talk about yummy - wrapped in romaine lettuce leaves with sliced tomato, mushrooms, sprouts and drizzled with Alissa's Honey Mustard Dressing ... mmmm ... :D
Now I'm excited about having the burgers on an actual bun!

Hi Apples'nAvos,

I shaped mine into halves that way it dehydrates faster. With whole buns, yes longer time to dehydrate plus the insides may still be mushy and sour and you do not want that.

And yep I did the buns with the carrot pecan burgers and they were yummy.... hmmmm reminiscing reminiscing :rolleyes:

Thanks for the input :) - I took both of your advice and shaped them into halves, and they seem to be dehydrating pretty fast - carrot pecan burgers for dinner tonight! (not that they weren't for dinner last night, or for lunch AND dinner on sunday ... heehee)

I realy love this raw "un"cookng thing - I get to be so creative ;) Isn't it great!?!

When I made the carrot pecan burgers, I liked them, but there was this undercurrent of bitter taste. Do you taste it in yours? Do you think maybe I jst didn't rinse my sprouts enough? I should try again.

Please let us know how your buns turn out. I've been wanting to try that one!

I made the carrot pecan burgers 'once upon a time' ago and I do not remember any bitter after taste or whatsoever. For if there was, it would have been stuck in my grey matter!! I am not sure why/how it tasted like so for you, hence I cannot advise. Buns... they were superb! These 2 are a good combo!!

Yes, I did notice a slight bitter after taste, but I attribute that to the ground flax that I added to the recipe to make it a little more sticky - it was waaaay too runny to be formed into burger shapes, and even after adding the ground flax, I had to dry them on teflex sheets for a few hours until they were solid enough to transfer to the mesh screen for the rest of the duration of the dehydrating. I left out the cilantro in the burgers because I really dislike it. Maybe that had something to do with it?
My remedy for the little bit of bitterness: the Raw Honey Mustard Dressing in Alissa's book. Whipped that aftertaste right away, but still left the yummy burger taste. :) BUt then again, I'm finding the honey mustard dressing to be veeeeerrrrrryyy addictive these days.

I also found that with the burger buns, I needed to add quite a bit of ground flax to make it more dough-like, otherwise it was too runny again. I've taste-tested the burger buns and I haven't noticed a bitter after taste. Maybe it depends on what it's combined with?
