I'm doing sprouts for the first time ever, and started with buckwheat (hulled). I soaked them overnight on friday, and have been rinsing and draining them three times a day for the past two days.

- how do i know when they're done? i tasted one, and it was mostly soft
-before i rinse them, it smells a little bit off and then once clean they smell just fine. is this normal?
- after a few hours, the collected water from the drip-drying smells almost curdled. again, is this normal?
- i realize i may have been incorrect in soaking them for 8 hours instead of 4-6. could this be an issue?

I usually don't sprout it that long... in even slightly warm weather here it goes off very quickly and smells funny. We soak for a couple of hours, maybe let sit with rinsing 2-6 then dehydrate or use in recipes. If you soak in water too long it will drown the seeds, and they start to rot too.

I don't know what the optimal sprouting time is, but just know in Australia without air conditioning they don't last more than a day sprouting.

Buckwheat should be soaked for 4 to 6 hours and then sprouted for 2 to 3 days. You may have soaked for too long but keep going and see if they do OK. They will be trying their best so give them a chance.

For some reason, the buckwheat I've got gets pretty slimy when I soak it. But I just pour it into a strainer a couple of times a day, rise it good, then drain it and cover it.

I use a cheap jeweler's loupe to check my sprouts. That way I can use them as soon as they sprout and they don't have time to get bitter.
