hi--

Whats the deal with nuts: re rancidity? i have read recently that most nuts are rancid if they are not in-shell....and that particularly with walnuts, people tend to not be able to tell the difference by taste because they are so used to eating rancid ones they think thats what theyre supposed to taste like...... and if youre eating rancid nuts then your putting bad stuff back into your body... I get my nuts from a little coop with a pretty high turnover, but they are not refrigerated.... but i also dont really have the time to locate, purchase and shell nuts before i can eat them...... i really liked walnuts but have stopped eating them until i know what the deal is...


Also, are most nuts raw? or are walnuts, pinenuts etc steamed or heated to get them out of their shells or dry them or something? i know most raw cashews are not really Raw, but now i have heard this about other nuts as well....?

I can tell ya, you will KNOW if you have rancid nuts. *BLECH* they taste awful. Don't believe everything you read.

Rancid nuts have a sorta "stale" taste to them. Ever tasted stale potato chips? Similar to that. Fresh nuts are just...tasty! :p

From what I know, walnuts are not difficult to shell, so I'd assume they didn't need any special steaming, etc. to shell them. Macadamia nuts are very hard to shell without using a special device, which is why I believe the price of shelled Macs are so high compared to unshelled. Almonds, I've recently heard that the ones sold at like Costco are not truly raw..but I'd kinda trust the ones at the co-op as long as their not indicated to be roasted.

Cashews, yeah, they steam the outter shell to remove it. But I had a student in one of my raw classes who studies and teaches about enzymes and he told me that the actual nut never gets hot enough to destroy the enzymes so that's nothing to worry about. I believe him and I continue to buy and enjoy my raw (but not TRULY raw) cashews! ;)

As far as I know, unless pinenuts say "roasted" on the bag they're raw...kinda like walnuts (which I don't think I recall ever seeing roasted walnuts...hmmm)
