I just made some veggie bars for our 14 month old daughter.
She loves eating fruit but I was afaid to give her too much for veggies b/c I don't know if she can chew them up ok. I was a little concerned that she was not getting enough veggies. She likes the green smoothies but is at the age where she wants to be feeding herself and not being fed thank you very much. So I made her some veggie bars and she loves them!
Here's what I did
In food processor add a
handful of soaked almonds
handful of saoked dates
handful or raisins
handful of walnuts
blend up until well mixed together and then take out of food processor
add to food processor greens (I used spinach and kale and also some sesame seeds) and blend
add nut/fruit mixture back into greens and mix well
spread onto dehydrator sheet and "cook" overnight until firmish. I cut these into bars before I dehydrated them. I wanted them to be easy for her to pick up and eat or to carry around.
She likes them and now I know she is getting her veggies!
