View Full Version : Cashew Carrot Pate' w/a kick !

Tried a new recipe Cashew Carrot Pate'- Very easy & w/ingredients we all have. I served them in peppers (I think Hungarian-too hot for my husband, but I loved them !!!) also w/ a salad w/ a scoop of pate' & a few macs & a few pesto stuffed mushrooms. Recipe:
2 carrots peeled & chopped
1 celery stalk-chopped
3 cloves garlic
1 cup cashews (soaked for 15 minutes)
a dash Bragg's
1/4 cup olive oil
dash sea salt
Place veggies in food processor-blend until fine. Drain cashews & then add & process. Add rest of ingredients..
;) I added cayenne...not in the recipe, but I felt it needed the KICK !!!
It was so good & easy :D

Recipe came from a book "Incredibly Delicious-Recipes for a new Paradigm"
It's a vegan book w/a raw chapter. I'm going to try a few more & report back.

Can the carrot-nut pate be made a day ahead? I would love to make it tomorrow for my lunch on Monday.

looks good, I think I will give it a try. Can I use carrot pulp?

Leeleelocs- I would use carrots-not the pulp for the flavor/fiber/& water content. I also tasted along the way To add more of the ingredients that you like.
Pamojamo- I had it the next day & it was even Better !!!
Exerb- You are so welcome. I love posting new ideas & my husband has really enjoyed toying w/his camera.
BTW...I served Pate' in Hungarian Peppers...Kind of "HOT" ...I loved them, but too hot for Husband.
The next day I served the on bed of greens w/a dash of Namashoya. Very delicious . :o
I am trying to do simpler meals (w/more water content) & not so much dehydrating except for breads & flax crackers. I will be experimenting w/some new pate' recipes & will keep everyone posted w/a photo. :cool:

I just made a batch for lunch tomorrow. There is actually enough for lunch on Monday and Tuesday. I had to sneak a taste and it is wonderful. I know it will be even better after the flavors mingle. I am going to roll my pate in romaine leaves. Yum! Thanks for the recipe.

Glad you like the pate'. It's nice because we all have carrots/celery & cashews, etc...-but I bet you could sub another nut. sounds great rolled in the romaine leaves. :p
This sounds wonderful, thank you for sharing it with us. I have all the ingredients and plan to make it for dinner tonight...should be perfect munch material after being out shopping all day. I love those Hungarian peppers, what zing!

Thanks TA- You will love the pate' served in the Hungarian Peppers. It just "kicks it up a notch." :D
