View Full Version : Mysticat's Cookies...Y'all MUST try them!

Okay, just when I thought Mysticat's cookies couldn't get any better when I made her NUMMY chocolate chip cookies...I made the ginger stars (though mine weren't stars...just standard cookie shape) and OH MY GOSH are they ever good!

Gingersnaps were one of my favorite SAD cookies and these definitely take care of any cravings for the SAD version! I was a bit skeptical because most cooked ginger cookies have molasses in them and this recipe did not...but man, they are delicious!

So, KUDO's to you Mysticat for creating such awesome cookie recipes and sharing them with us! :D

Oh, and I forgot to add that I made a couple of slight modifications to the choc-chip cookies...I added about 1/4 c. more of the ground oats than the recipe called for AND I added 1/4 c. of ground golden flax seeds along with a dash or two of sea salt and I didn't roll them in cashew flour and they were dehydrated. Talk about giving Toll House a run for the money...the coconut oil is key in giving them an awesome buttery flavor (but ONLY if you have a nice, tasty brand of coconut oil. I usually use Virgin De Coco but I bought some from my local co-op by Omega Nutrition and it tastes the same as the aforementioned one) You can see pics of the one's I made in the dehydrator below. In the last batch I recently made, I added chopped pecans and walnuts to half of the batch. Forgot to add that I added a little agave to the choco chip mixture.

Those look good Rawkie. Imagining nuts in them definately sounds Toll House like. Thanks for the post and the pic.

... nods nods nods nods nods..... I totally agree with Rawkinlocs!!! The cookies are rated 2 thumbs up... 2 toes up... :p you have to give it a go to believe it!! I have done both the Ginger Stars and Chocolate Chip Cookies and they are HIGHLY recommended!!.... mmmmm I am reminiscing the taste.... :rolleyes:

.... I have to add this.... thank you Rawkinlocs for sharing your Chocolate Chip Cookie photo!! Like the cookies, i am melting too at the sight of it.... my knees are shaking.... i feel weak.... is this withdrawal symptom?? :o

I've made Mysticat's coconut macaroon cookie recipe several times now -- BEST COOKIES EVER! After seeing your picture, Rawkinlocs, I'm going to have to make the chocolate chip ones, too!

I remember being a little confused as how to make the "chips", so I'll go re-read the recipe. Thanks for including the link!

any ideas about substitutions for the oats. i am gluten intolerant and don't trust them.

yes us too! I tend to use a flax & nutmeal blend that works well.

I would suggest that if/when you make almond (or other nut) milk, save the pulp and dry it out in the dehydrator until thoroughly dry and grind it into a fine flour and use that in conjunction with the cashew flour.

OR...perhaps (if you like the flavor of buckwheat), purchase, soak, sprout then dry out some buckwheat and grind that into a flour.

These are the BEST RAW Cookies we have had so far!

I used all cashew flour!

Wow! Just found this thread. Rawkinlocs, that pic is mouthwatering!

So if I don't want to "powder" them with cashew flour, should I just use 3/4C oats or cashew flour for the dough?

No sweetener in the choco chips?

It's funny ... when I stumbled upon the thread with the recipes MONTHS AGO I didn't take note, because I thought the recipes were TOO HARD. Now I look at them and can't wait to try them. It just shows that as we become more comfortable with RAW things don't seem as hard.
