Hi, i looked through all the beautiful pics posted on this site and i need more! ;) what can i say, im addicted. anyone want to share? i'll start off this thread with a chocolate cake i made for my little sister's birthday, which is tmrw. shes turning 11 :eek: im getting too old, im almost 17!! haha

My first ever birthday cake made last year. Its the chocolate cake from Alissa's book. Hope attachment goes well (my first time doing it too!!).... so here goes.... enjoy!

It's Alissa's pizza crust dehydrated to still be on the soft side, mock salmon pate (I always use pecans and this time I used tomato instead of red bell pepper since I was out and it still turned out good), lettuce and soaked dried tomato slices (I was out of fresh). The yummy stuff falling down is thickened agave mustard sauce. It is like an agave mustard mayo.

I really liked it and I thought it was probably a too mature taste for my 4 year old, but to my surprise he liked it too! He took about 5 eager big bites of it. He even said "I love your sandwich." Which surprised me even more!

for anyone who likes a sweet potato pie/pumpkin pie/squash pie sort of thing... it needs whipped "cream" but its not in the pic because I had to cut into the pie and eat some before I finished making the cream.

Thanks Beanie, I cut it after it was dehydrated. I actually liked the way the dehydrated edges looked, which were pretty straight also (except for the corners), but I had dehydrated everything in one large square. So when I cut it into 4 squares, I wanted the edges to match.

What is the recipe for that pumkin/squash pie...

It's sort of my own creation. It is very easy to make! I could try to post a more exact recipe next time I make it, but here's how I make it, perhaps you can just "taste and go" as you make the filling. I love the pie, it is a great substitute for a holiday pumpkin pie. And so nutritious!

The crust is pecans and unsoaked dates in the food processor (or sometimes I use dried figs too), you can put a pinch of salt if desired, then press that into your pie plate. The filling is just this squash we stored from our garden, maybe it's a little darker inside and a little more "chestnut" tasting than a butternut, but butternut would be the closest, I just peel it, but into big pieces, then puree it in the cuisinart for a long time with some dates to the right sweetness, some fresh grated ginger, and "pumpkin pie"-type spices, mostly cinnamon, but a tiny pinch of cloves, mace, nutmeg, ginger, whatever. If you have the "pre-fab" pumpkin pie spice, I would say use half cinnamon and half pumpkin pie spice, then taste and adjust. The right amount of dates and spice will blend out the raw squash taste to get closer to the illusion of pumpkin pie. If it needs it, I add a squeeze of lemon, if I add vanilla, it is a TINY miniscule bit, because too much vanilla takes away the pumpkin pie spice taste. A pinch of salt can be added too. I make it a little firmer in texture by adding a little psyllium husk powder (I just grind psyllium husk I buy in a bulk store in the coffee maker to get a VERY fine powder). The dates I don't soak, unless they're hard as a rock, then I would only soak them a bit, because you don't want to add too much moisture. It sort of glistens on the top, I think from the sugar in the dates. That's a star anise in the center.

Then you can make whatever raw whipped cream recipe you prefer. It's worth the effort to make the cream, I think it really makes a "pumpkin" pie. In the cream is where the vanilla really goes for me.

Lana, what are those chips? Are they corn or Flax or someting else. Your creation loooks very good. Are those olives? Where do you get raw olives?

The green slices are jalepeno slices & some green onions for garnish. I get olives from Glaser Organic Farms in Miami. They are really great.

This is Carrot & Parsnip Fettuccine. I got the recipe from the following link:

This is another great Raw food site. Alissa is on it!!!

I adjusted the recipe a little- I marinated mushrooms as directed-added some thinly sliced onion- 1/2 small

For the pesto, I added a lot of cilantro-probably a cup (I just kept tasting until I thought it was right) & I added a Red Chile Pepper (Red Fresno). We like spicy foods.

This was sooooooo good. :p :p We even thought it would be better after it sat-& a great dish for potlucks, non-raw dinners, & even traveling or lunches. Enjoy...

The guys will totally dig the chile conqueso-it is so rich & decadent. I actually think it is better than the dairy ridden stuff from the restaurants/delis. (That was a big fav of mine) You will love it also.

The carrot/parsnip Fett was so easy to do & my Husband went nuts over it. What is nice is pumpkin seeds are cheaper & lighter that macs/walnuts in traditional pesto-(I have to say I almost had to put basil in instead of the cilantro as it is so ingrained in me.) I am glad I followed the recipe.Also, carrots/mushrooms ( I don't think you need to have portabellas-any would prob do) & Parsnips-talk about a cheap meal.

i will get recipes for u soon. just gotta try to remember what i put in them. the chocolate cake was like that brownie recipe i posted on this forum b4 except a little more flax to make it drier. the cookies ive gotta think about. i have a short term memory u know

The chocolate brownie is adapted from RawGuru's recipe. And then I came up with the coconut creme filling on my own.

"JOCELYN'S CHOC-ONUT BROWNIE"

Yield: 9x13 pan

Ingredients for Chocolate Crust & Crumb Topping:
4 cups unsoaked pecans
4 cups unsoaked brazil nuts
1 tsp. sea salt (original recipe called for 3 tsp.)
1 1/4 cups. raw cacao powder
3/4 cup raw carob powder
2 cups soaked raisins (pureed)
6 tbs. agave nectar (I added a little more agave than it called for - to my desired sweetness)
1/2 cup melted coconut oil

Coconut Creme Filling:
Blend in a blender until smooth:
meat and 1/4 of the juice of 2 young thai coconuts (add more juice to the blender if too thick)
2-4 spoonfuls of coconut oil
agave nectar (to your desired sweetness)


DIRECTIONS:
1. Prepare Chocolate Brownie Recipe as follows:

Blend pecans into a fine meal and place in a bowl. Blend the brazil nuts to a fine meal and combine with the pecans. If you want the brownies chunky leave some nuts slightly chopped. Add the salt, cacao and carob powders to the nuts, and mix until well combined. Mix pureed raisins thoroughly into the dry nut mix. Add your agave nectar and coconut oil into the brownie mix and work through it with your hands. The texture will be a bit crumbly.

2) Place 1/2 or 3/4 of the brownie mixture into a 9 X 13" glass dish and press down evenly. Keep the remaining brownie mix for use as the topping over the coconut creme.

Note: Keep the remaining brownie mix crumbly for the topping and be sure you have enough remaining mixture to fully cover the coconut creme filling.


3) Pour Coconut Creme Filling on top of pressed brownie mix. Place in freezer until creme is firm - about 1 hour or so.

4) Take choc-onut brownie out of freezer and sprinkle remaining crumbled brownie mix on top of coconut creme filling.

5) Return entire choc-onut brownie back in freezer until ready to serve.

Serving suggestions:
Drizzle berry sauce over individual slices for presentation. For the sauce, just blend your favorite berries (raspberries, strawberries, etc) with agave nectar or honey.

** You may want to thaw the brownie a little before you serve it so it is not so hard. The original Chocolate Ecstacy I was trying to mimick freezes this recipe until ready to serve - which is how I got the idea to freeze. You really don't have to freeze it if you don't want to.

** If you don't have the cacao powder, you can definitely substitute carob powder for it. I'm sure it'll taste just as good. I am going to try that the next time I make it.

LOL!! I just showed my husband all of your posts about the brownies and he was laughing!! You all are so funny.... :) Thanks for so many wonderful comments. I enjoyed making this recipe and can't wait to hear what your experiences are with it! We are teaching an 8-week health seminar out of our home and since I made those brownies last Friday at our meeting, I have had so many requests to serve it again. LOL!

BTW....the recipe will totally FILL the 9x13 pan to the top! So, it will make a lot. This is a great recipe to bring for parties!

As far as being low on the coconut oil, I would probably just put whatever amount of it you can or simply omit it rather than substitute it with olive oil. I put the coconut oil in because of its ability to be more solid at cooler temperatures (below 76 degrees) - so the filling would be a little firmer and not so runny.

Where do you live? Do you live near any asian markets? $33 for 9 coconuts is very expensive - especially if they are not organic. A lot of asian markets sell non-organic young coconuts for cheap. Where I live in AZ there's an Asian market called Lee Lee's. I can buy a case of 9 coconuts for around $8 or $9! Even Whole Foods Market sells young coconuts for $1.99 each.

I personally would love to get organic young coconuts. But they are so expensive. Oh well...what can ya do... :)

Well, here's my picture. My wife and I have made a few desserts in the past week, but it didn't strike me to take a picture until tonight. We've made blueberry pie, apple pie, walnut fudge and now...blueberry cheesecake. I also attempted to add a little presentation. Haven't tasted it yet, but the "cheese" part was really good to clean out of the food processor ;)

Jocelyn says these are very similar. I haven't tried to make them yet (since I have a piece of Chef Ito's pie in my freezer right now), but, when I do, I'll report on how close they are to his, 'k?

BTW, glad to see how raw you now are (though I'm a bit sad that it didn't work out that I'd be seeing you around my neck of the world anymore - pout).

I'm still jealous that you're in the land of cheap and easy durian and coconuts!! Not to mention all the other tropical fruit. Sigh.

Hmmmm ... they've been in every food store I've been in recently -- the major chains, Plus, of course, Trader Joe's & Wild Oats. One of the traditional supermarkets is even having a buy one get one free sale on blueberries starting tomorrow. Today I bought blueberries and raspberries but passed on strawberries.

.... OH BOY!! Choconut X-stasy!!?? Boy I miss Ito! :( I miss you too and the whole bunch! Well do report if you have any chance in making them. I am really really low on coconut oil. I am rationing them for my intake, its about the most 2 T spoons left *boo-hoo*

Well things always turn out for the better. You may not see me physically there but you will always 'see' me here!! ;)

Oh pros and cons, you are within reach of cacao nibs!! Ito!! Raw reality bunch!! :D

Me, I have only the tropical fruits to keep me going and this VT raw friends but I am not complaining!! :)

Hi Diane! :) How are you, my dear?! Yes, let me know what you think of the brownie when you get a chance to making it! It is not exactly like Chef Ito's pie but when you're craving for it and don't have the benefit of living close enough to buy it, this version definitely comes close - at least close enough to fill that craving. But of course, I'm a bit biased! LOL!

Ahhh so this is what goes on at late at night ;) . All the really good sweets and a couple of game foods are brought out for display and discussing :) All that sweetness looks so tempting, I'd have too take my time, exploring each one :) . Those brownies "OH MY". :D .

Where do you live? Do you live near any asian markets? $33 for 9 coconuts is very expensive - especially if they are not organic. A lot of asian markets sell non-organic young coconuts for cheap. Where I live in AZ there's an Asian market called Lee Lee's. I can buy a case of 9 coconuts for around $8 or $9! Even Whole Foods Market sells young coconuts for $1.99 each.

I personally would love to get organic young coconuts. But they are so expensive. Oh well...what can ya do... :)

Jocelyn, I have tried everywhere to get the coconuts. Even called a few local chinese/Thai restaurants-they did not even know what I was talking about.

The closest Whole Foods is 250 miles away. I can order from the net-but it is , I believe, $26 plus shipping for the coconuts.

I hope the ones I have ordered are fresh-as I have them coming in on a 2 week basis-but I am going to tell them that the $33 price is pretty high-esp. for a non-profit co-op. I really don't mind paying-however-if that is what it costs to get them up here.

I live in Mackinaw City, a resort town at the tip of the mitt in Northern Michigan-by the Mackinaw Bridge & Island. The whole town is shut down during the winter-except for a few bars/restaurants & fudge stores.

That's the price you pay to live in a resort area. :o

Cannot wait to try the brownie recipe.

PS. I know I've read of others having trouble getting the young coconuts...so business idea...someone start shipping them to raw fooders...I think it could be very profitable & rewarding. :cool:

As to all the questions about where I get the berries, the major grocery chains here have them all fresh. They're quite expensive, but worth it to me. Blueberries, raspberries, blackberries, strawberries, and cherries are all available here, but at inflated prices because of being out of season.

I still haven't taken a bite of the cheesecake, but I will at lunch today!

Here's my "Choc-onut Brownie"! I was trying to imitate a Chocolate Ecstacy dessert at a raw restaurant in CA, during our teacher certification course with Alissa. This is the result of my own attempt! Not bad, if I do say so myself. LOL! I served this at my first taste testing party and everyone LOVED it!

The major store here is called Hyvee. It's a midwest store. Then a new one moved in called Schnucks. I go there now since they're a bit cheaper and have a bit more produce for me to select from. Neither have a big organic section, but it is winter and everything. :) I buy what organics I can from the local health food store anyway.

There are other smaller groceries around, but those are the 2 I use.

ok exurb, sorry for the wait, here are the recipes:
Cookies
2 c dry oat groats
1/2 c walnuts
1 vanilla bean
3/4 c agave (more to taste)
water

Flavors:
banana- 2 or 3 bananas, 1 tsp cinnamon, 1 tsp nutmeg, raisins optional (needs less water)
chocolate- 1/2 c carob/cocoa powder
lemon- 1/2 c lemon juice (less water)
oatmeal raisin- 1/2 c raisins, 1/2 c chopped walnuts, cinnamon

blend oats until finely ground. add walnuts and vanilla bean and blend again.
add ingredients according to which flavor you'd like
mix in agave and enough water so that the mixture is doughy
optional: place in the fridge so ingredients can firm up and the mixture is easier to work with.
form into cookies shapes (use wet/oiled hands to prevent sticking) and dehydrate for about 10 hours until dry. enjoy!

Vanilla Filling for Raweos
1 c walnuts
1/2 c water
1 vanilla bean or 1 tsp vanilla extract
1/4 c agave

blend until smooth. chill until needed

Ooooppps .. I saw all the kind comments about my burger and never got around to responding! Sorry ...
Aisah - lol ... it's a good thing you weren't here to take a big bite out of the burger because it was TOTALLY raw inside (the buns i mean). I guess they were too big because it took another full 24 hours (48 total) to dehydrate them properly. And just for the record, as yummy as the burger buns taste when they ARE properly dehydrated, i do NOT recommend eating them when they are still wet <shudders at the memory>
Misslinda - for the shape, I put a big ol' blob onto the teflex sheets and then tried to make it dome-like and then placed my cupped hand over the top to round it out some (does this make sense? ... lol .. if u lived close to me I'd SHOW you, but putting it into words to challenging) and I played with the edges to make them round
RowanC - :) as you read above, yes, they were mushy inside. But thank you for your compliment on my burger - I was very pleased with myself :D

I think the Burger Bun is the very best bread-type recipe in Alissa's book -- if you're trying to replicate a baked taste. It absolutely is scrumptious. As you found out, though, you want to be careful and not make it as large/high as real baked burger buns. They do take a long time to dehydrate; just keep checking them. I hope everyone tries them as they're great (am I being repetitive? - hmmm, guess I'm hungry!)

Oh yeah! I have the ingriedents for the broccoli and cheese and for the date nut torte (which is my fav dessert).
Have yet to try the pizza, but oh that looks so yummy and you have REALLY encouraged me to give it a try.
I've put it off forever because I have the same dehydrater as you and thought that pizza could not be made on there! I'm clueless in improvising! :)

One wrap made with guacamole, onion, green onion, red pepper strips, finely chopped celery, shredded carrot, shredded cabbage, diced tomato, mixed greens/herbs (the purple leaf showing), lemon juice, sea salt, cayanne, and chili pepper. The wrap itself is a collard green leaf.

This second one has all the above ingrediants, but replace the miext greens/herbs for marinated portabella mushrooms cut in strips. Marinated in plain olive oil to make it more "meaty"

The guacamole in these reminds me of egg salad and kinda looks like it too. I was never one to like egg salad, but I like this lol.

Use collards AS IS; no need to do a thing, they are so easy and great tasting. Also you may be tempted to ditch the stem, dont, it too is very nice!

Wow! Thanks everyone (blushing), I really appreciate the kind words. I have started building a raw food web site to provide among other things a nation-wide raw food restaurant and personal chef directory along with general raw and living food health info. I am taking Alissa's class in May and am also going to use it to promote teaching the chef classes when I get back. That's why I have been working on taking really nice and colorful images of food as I prepare it. I also have an occassional photography gig with a friend. Although we usually do portraits, it has taught me a lot about angles, lighting and color. I use a Canon 20D with a polarizing filter.

eachpeachpearplum, i posted a brownie recipe on this forum, and i just modified that with a bit more flax to make the cake. looke for brownies in the banana search thing.
exurb- i have to warn u that the truffles r gooey if u dont keep them in the fridge or freezer, so thats where u should store them until ur ready to eat them. i brought them to school so i needed to roll them in crushed nuts so they could be picked up and not smooshed!
heres the recipe:
1 c walnuts
1/2 c pecans
1/4 c cocoa/carob powder
1/4 c agave (more to taste)
1 vanilla bean

blend everything in a food processor/blender. roll in crushed nuts, coconut flakes, or cocoa powder

Here's one more. I just made this today. SO yummy! It reminds me of an old SAD favorite: broccoli, spinach, pineapple and olive pizza - I added jicama, tomatoes, and raw wild peanuts. The dressing is a modified version of Alissa's Pad Thai sauce. My husband just loved it!

Thanks. I developed all of these recipes. Some are modified or inspired versions of others I have run across. The spread is an herbed variation of one of Alissa's cheese recipes - I don't remember which one right now though.

I hope you like it, it's one of my favorites. I think it is better the second day. I especially like it stuffed in celery, but it is also a great dip for carrots.

Your website is gorgeous! Where do you or anybody get the raw olives? I have been looking for these for a long time. I asked at whole foods and the woman at the olive bar didn't really know how the olives were processed.

Also, I would like to know where you get the La Province (sp?) for the herbed spice spread. It looks so good.

There web sites that sell "raw" olives. Although, it is my understanding from several folks-in-the-know that olives cannot be eaten completely raw - that they are indigestible in their natural fresh state.

I buy them at whole foods. The lady there tells me that they are minimally "cooked." I don't eat them often, but when I do, I get them there. Sorry I can't be of more help.

Herbs of Province are wonderful. You can get them just about anywhere that sells gourmet herb/spice blends. Even our local chain stores sell them here. The brand I buy is Morton and Bassett - they also make an organic line (a little harder to find sometimes). They are salt-free, not preserved, not irradiated and dried, not baked. I hope you can find some in your area. They are just wonderful. But like I said in the recipe, if you can't find it make your own blend. This is what it contains: chervil, basil, rosemary, tarragon, garlic, lavender, marjoram, savory, thyme and parsley. I think some of these are a little duplicating in taste, so you could probably just do basil, rosemary, tarragon, garlic, lavender, thyme and parsley.

I hope this helps.

You can buy raw olives from Nature's First Law. This is what I did until I discovered a local olive grower selling raw olives at my neighborhood farmers' market. He sells them to Nature's First Law, actually. They are not heated, they are dry cured using Celtic sea salt, and they are delicious.

Pansy ~ I am so glad the choc-onut brownie recipe turned out great for you! Another gal just emailed me about her attempt of the recipe and she said it turned out great too. :) I need to make it again because it's been several weeks since I had it. It is definitely a favorite recipe of ours!

Here are pictures of a raw fudge and fruit tart recipes I made recently. The recipes are from Jana Adjani on the GreenChefs.tv site. These were absolutely delicious!! Talk about satisfying your sweet tooth in a healthy way! :)

and let's talk about your choco-nut brownies. I made them Friday and took it to a raw potluck at Amanda Crook's house (an old friend of yours). Everyone just loved them and wanted some to take home. It was a real hit. Thank you for sharing that recipe. Easy and delicious!

LOL! Yes, Maydolphin, I guess I should stop complaining and be content with what I do have, eh?! :p I've always wanted to take a photography class, but have never gotten around to taking one. But I am so inspired by Mawraw's photos (and the food too, of course! LOL) that maybe it's time to consider finally taking some type of photography class after all these years.

Maraw - I am so glad the brownies were a hit! :) Yes, it is surprisingly easy and I totally love the fact that it fills a 9x13 pan for parties. I just emailed Amanda this weekend. Isn't she such a sweetheart?? I am so glad to have met her during our teacher training in December. I didn't realize the two of you know each other. That's great!

OK, here's a new recipe - complete with picture. I have tried and tried to find a patty/burger recipe that we all like. Ones with sprouts or mushrooms have ended up tasting earthy/bitter or spoiled. No one in my house really liked them. So earlier this week I just got some ingredients out that reminded me of something SAD I use to make. It was a hit. I've shared it with a few friends and everyone, so far, seems to like it OK.

Let me know if you see a way to improve the recipe!

Ingredients:
Soak together for about 3-4 hours:
1 C walnuts
1 C pecans
1 C cashews
1/2 C sunflower seeds
2 dates, pitted
7 sun-dried tomatoes
--------------------------
2 celery stalks, cut into chunks
2 large ripe roma or similar-sized tomatoes, cut into large chunks
2 T. nutritional yeast flakes
2 tsp. savory or dried parsley
1 T. apple cider vinegar
1 tsp. minced garlic
1/2 tsp. ground white pepper
1 tsp. sea salt


Preparation:
Drain soaking ingredients and rinse well. Combine all ingredients in a food processor, putting the tomatoes and celery on the bottom. Process until "meaty" and a somewhat smooth texture is reached.

Place 10-12 medium-sized mounds on dehydrator screen (not teflex sheets) and shape into patties - about 1" tall. Dehydrate at 130 degrees for 3 hours and then turn down temperature to 115 and continue drying for another 5 hours, then flip the burgers over. Continue dehydrating for another 2-3 hours. Patties will keep well stored in the fridge. I serve these with the Creamy Cucumber Dressing and lettuce and tomatoes.

Jicama is a root vegetable that comes from Mexico. It is very watery and has a sweetness to it. Very good - lots of crunch. It is usually sold near the root veggies like beets and turnips in the produce section. Although I have also seen it near the onions and potatoes too. Just depends on your store I guess.

If you've never eaten it before, please do peel the outer skin and once it is cut up, keep it in some water in the fridge. It is wonderful to pull out a few pieces in the summer and just much away. It has always been one of my favorite snacks. My children like it too!

Question about the temps... I thought the temp had to be under 115 degrees so as not to kill enzymes? Yours start at 130? I have also seen other "raw" recipes that do the same thing but start out at a higher temp of 140 then after about 15 -20 minutes you turn the temp down... confused now...

That's a very good question Debbie. When I first heard of raw foodists doing that, I was confused also. Excalibur has done several enzyme tests using varing temps and found that you can dehydrate at up to 135 degrees for a total of 4 hours without harming the enzymes in the food. The reason for this is because it is the air temp, not the food itself that is that temperature. It takes several hours for food to reach the same temp as the air. In fact, they recommend this when dehydrating certain types of food to keep bacteria counts down. I actually spoke with someone from Excalibur about this very subject just last week. Thanks for that. I will be sure to look around and see if I can find that thread. And I will try to remember and ask Alissa for more details about that at the class in May.

Having said that, it is my understanding that the reason Excalibur conducted these studies is because they have such a large raw clientelle. They wanted to make certain they were keeping within "raw standards" in recommendations and recipes. One concern with dehydrating at low temps for long periods of time is bacteria growth. The longer you keep something in a warm and moist environment, the more likely you are to encourage bacteria growth and spoilage. They believe that this speeds up the drying process without damaging the enzymes.

Of course, this is only what they told me at Excalibur. I will do more searching to see what else I can learn.

You can find it in the midwest but right now its gross and moldy looking at places carrying it. Should not even be for sale like that! It should be available, good ones usually by May and maybe before but that seems to be when I eat them more....May through October.....Whole Foods in IL has them and locally in NW IN they will be at Meijer, Martins and Super Walmart but not organic.......yummy, believe me I look every week hoping they will be here earlier then May!

Well Raw Truth,

A little more time in the dehydrator if you live in a humid area means spoilage, frustration, wasted energy and money on food ingredients and electricity.

I think raw food has to be doable, and last time I checked mold and bacterial bloom wasn't good for you.

After experiencing complete failiure leaving things in the dehydrator until they had mold hanging off them, I will be starting my food at the higher temp.

And I think considering Excalibur make the dehydrator, and Gabriel Cousins uses the same method there is no damage to be done.

If you wish to run the risk of losing your food, good luck to you. I for one won't be doing that, money doesn't grow on trees.

I have done a little reading on the topic of raw-appropriate dehydrator temps. It seems there is a general concensus that the research conducted by the Excalibur company is without scientific dispute. I cannot locate any documentation showing that dehydrating at a temperature of 140 degrees for (no longer than) 4 hours kills a significant number of enzymes to cause the food to no longer be considered "living." Having said that, it doesn't mean the research isn't out there - I just haven't found it.

I did find that there are many leaders of the raw food movement divided on this topic. Some agree with Excalibur's findings, while others prefer to stand with a safer approach. There are many suggestions to use digital food thermometers in the dehydrator to insure safe drying temps. This sounded like a great idea to me!

Living near the Texas Gulf Coast, I am unable to work within the safety zone of dehydrating at 100 degrees for days on end. I get nothing more than a nasty moldy spoiled raw mess at the end instead of the intended and much desired outcome.

I guess this is one of those topics we will all have to agree to disagree on for the time being, and go with what works best for our lifestyle and ultimate good health.

This potluck was amazing...I was soooo full! There is a wonderful raw lasagna, a blurry picture of some mango tarts (chad Sarno's recipe I think) and a sweet potato/chocolate pie. I tried some of David Wolfe's chocolate too,....it was amazing.

The lasagna is not Alissa's unfortunately. I have the recipe somewhere. I did not make it myself, our gracious host did.
He let is warm in the sun I think for a good while before serving it..it was temperate, but not cold....the marinated veggies in it were scrumptious!
One could conceivably put the lasagna in the dehydrator too just for a little 'zap' before serving.

And ... the recipes taste wonderful just as they are at room temperature.

A great (and economical) thing to bring would be the Mock Salmon Pate with celery sticks and/or red pepper strips for dipping. Simple is okay.

If you have some Nama Shoyu and raw olive oil, you can do marinated veggies -- an un-stir fry. That's also low-cost and really good. Don't feel like you have to make a fancy recipe for a potluck!!

I used a big spaghetti squash, it took like an HOUR to pull out and seperate all the strands... and I just got a saladacco and could've used something else, but I wanted spaghetti squash, darnit! One large one was a generous portion for two people. Search to figure out how to cut them. We used the sauce here: http://www.fromsadtoraw.com/Recipes/SpaghettiSauce.htm Except we doubled it and altered it a bit, it was fantastic. So we used 30 cherry tomatoes(It actually was just one pack that said grape tomatoes, but it's the same, right...?), only ONE full sized carrot because those instructions are confusing, just one green onion still, 2 tsp. Garlic Powder... AND half a small clove of garlic, that was an accident! But it tasted great if you love garlic, which we do. 3 2/3 Tbsp. of olive oil, and 3 2/3 Tbsp. nama shoyu instead of Tamari. 1/2 tsp. Thyme, and a sprig(about 1 1/2 Tbsp. chopped?) of fresh oregano, plus three light shakes of sea salt from a salt shaker. Garnished with saladacco'd carrot and fresh oregano. It was WONDERFUL, tasted just like real spaghetti! Mom complained that it was cold, but I liked it, and it's easily heated up in a water bath or dehdrator or something. The salad was bagged Spring Mix with various greens, spinach and red leaf and romaine and radicchio and stuff, chopped green onion, jicama, red and orange bell peppers, grated carrot and beet, mung bean sprouts, and 'crunchy sprouts' that are just misc. and come in a pack. The wonderful dressing was made by dicing however much ginger you want and putting it in almond butter with a little water, mixed with a fork REALLY well or blended, we just always experiment and never have set amounts, but it's delicious.

I got raw nori sheets yesterday from Naturalzing.com and got inspired to make sushi. Let's just say it didn't turn out too pretty. While I was cutting it to size the stuffing squirted out!

I kinda did my own recipe, but with the guidance from another website. I can't rember waht the site was, but I found it within here if you search for "sushi" on title only. I used cauliflower with olive oil, lemon, and a little bit of honey as the "rice." I also added a variety of spices. I julianned baby carrots, cucumber, celery, redpepper, and avocado to put in the center and rolled it up :) Oh, first I marinated the veggies for 30 minutes before i put them in with olive oil and lemon juice.

I love seeing food pics too, this is a great thread!

The cinnamon roll recipe was posted on another thread by karenbeel, it is very similar to the one in Alissa's book so I compared the two and will include any changes I made below too.

Cinnamon Buns

2 C almond meal
1 C flax meal
1 C dates
1/4 Tsp salt (I don't use salt)
dash of cayenne (I didn't add this either)
Blend dates. Mix all ingredients into dough. Place on Teflex sheet. Cover with another. Roll out until dough is uniform thickness.

Filling
1/2 C dates
1/2 C raisins
1 Tbl cinnamon (and for me extra cinnamon!)
water (about 1/8 of a cup or more)
Place in food processor until smooth. Spread on dough sheet. Sprinkle with chopped walnuts and raisins. Roll dough up. Slice to desired thickness.
(I made 1 1/2 amount of this recipe as I knew I'd want lots of filling and I used pecans.)

Frosting
1 C soaked cashews
6 Tbl honey or dates (I used some of both)
1 Tsp vanilla
add water
Blend until smooth

Now I have to say I LOVE this frosting and made another batch and we've been using it as a fruit dip. It is delicious! The next time I will add some orange juice instead of the water. I think you'll really enjoy it Samadhisoul. I also put a few rolls in the dehydrator to warm up and then frost and eat, Rawkinlocs suggested this and they really are good warm.

And the green bean recipe was in another thread also, posted by Veggie. She said this recipe is based on Rhonda Malkmus' recipe from the book Recipes for Life.

1-2 cups green beans (pick tiny tender beans)
1 tomato (I used cherry tomatoes)
1/4 onion (I was out of onion so I used onion and garlic powder)
2 TBSP olive oil or flax oil or udos oil
juice of 1/2 lemon
(I also put in a sprinkle of Balsamic vinegar)

It tastes best if you let the flavors marinate for several hours.

Here are two recipes I made today. The first is Alissa's Corn Chowder and I added seasonings and chopped veggies. The second one is a fruit salad with chocolate pudding and cashew frosting on top. The pudding is based on Alissa's Black Forest Cake (2nd layer without the cherries) and the frosting recipe I posted above from the Cinnamon Buns. Chowder for lunch and pudding with fruit for dinner, gotta love it!

Lunar*Fey, I am still getting used to uncooked soups! This one I spiced up enough that I did like it and the veggies added great flavor too. The raw soups I've tried including broccoli and pea and this corn chowder too are a bit foamy, maybe the avocado in them causes this, I'm not sure. Experiment and see what you think, I am still working out the kinks to find a soup or two that I really really enjoy!

Ok the freezer pop was simple! Just make almond milk like you normally do but when blending add a few cacao beans & a scoop of maca! Strain it & pour it into those kids popsicle trays & freeze! YUM!

Inspired by the clips from Alissa's DVD(Which I really need to get!) at http://greenchefs.tv, I made mom and I a lovely collard green wrap today! my husband & I are on a crepe kick... 3 times in 2 weeks now. -and they all disappear each time! ha! The other pictures are of a chocolate cake & a "nori night"... kind of like a "taco night" I wused to have as a kid. We chop up veggies, make a few fillings, and fill nori sheets as we want to- the fillings in the pic are veggies, guacamole, and mock salmon pate.

Thanks Zena & Misslinda! ..... but I don't think much can top that cake you made Zena! It's just beautiful! It's a total inspiration... I need to try something like it one day. Maybe a birthday. It's gorgeous! I just started taking pictures of food I make. So many people think my diet must be so bland.. and I would like to have the pictures to proove them wrong.

Thank you so much, i'm blushing. I'm so glad that people are saying i've inspired them, what more could I ask for? If you ever make something like that please post it! Or anything else for that matter, this thread IS fantastic, my fav definitely. I just started taking pictures AND making food, the first 'raw meal' I made was the spaghetti in this thread. I've found that I really love being creative with food and showing people we eat more than salads, like you said. :D

Today is our seventh wedding anniversary and I wanted to come up with a really special meal and dessert - something we haven't had before. So far, I've got the dessert, apple and lemon cream tart. My husband likes apples and I like lemon - I thought this would be a nice combo considering the occassion. The crust really turned out nice. My two year-old had the remaining crumbs as part of her breakfast!

Also, how many young coconuts does it take you to get two cups? I hrdly get any meat out of mine!

Thanks Kelly! Those are some of my favorites too. Yes, you can definitely use dehydrated almond pulp to make the flour.

FYI - I am eating some of the cobbler now - guess I need to get some apples in me. I can't seem to eat enough of the lately.

It should take about 4 coconuts to make the complete recipe of filling for this. I get an average of about 1/2 cup meat from each young Thai coconut and about 1 cup of water. If you are just making it for the 4 of you, you could cut it in half.

Do you have the recipe for corn chowder? it's simply delicious, add spices. little at a time till you hit just the right taste. Once I just overdid it and it's too strong. let me know I'll share the recipe. You'r too cute not to share with !

Also, tonight's dinner was honeybee joy's Avocado Curry Pasta (http://www.rawfoodtalk.com/forum/showthread.php?t=12680&highlight=avocado+curry), once again edited a little as I forgot to add cucumbers, used half a sweet potato for the pasta too, and put the sweet potato and zucchini leftover slices in the sauce, trying in vain to tone down the lemon juice... the lemon was pretty big, so there was definitely too much juice and it was the main flavor, but it was still really good. Oh, I also added cayenne and five spice powder along with the TONSSSS of curry. It turned out LOOKING... interesting... but tasted really good! Approval from the whole family, and I have leftovers for lunch tomorrow!

So i had a nagging craving for rice, smashers...something warm yesterday. So I came up with a yummy replacement :) At first I called it rice, but the texture and visual looked more like quinoa or cuscus (sp?). I put cauliflower into my food prcessor. In another bowl I added juice of 1/2 a lemon, splash of olive oil, a flat plastic spoon full of honey (so not quite a tbs), cayanne, chilli pepper, and some salt. I mixed it up very well and stuck it in the oven at 110 degrees for 45 minutes.

Thanks for the compliment Zena. I used the dark red miso. Now I understand how your soup came out that way, you used white and i used red, LOL!

RP did not post a recipe per se; she wrote 'MY FAMOUS CREAMY CORN CHOWDER, WITH MASSIVE AMOUNT OF FRESH MUSHROOMS, CORN, RED PEPPER, AND YELLOW SQUASH mmmmmmmmmmmmmm I EAT THIS ALMOST EVERY DAY, OH, IT'S MADE WITH ALMOND MILK "

Corn Chowder for Zena:

2 1/2 C ALMOND MILK
2 C fresh corn
1 clove garlic crushed
1 each soaked sun dried tomato
Blend Well above ingredients
Add
dash sesame oil
dash soy sauce
1 t chili pepper
1/2 t cumin
*** can add 1/2 jalapenio diced
if you want it spicier
Top with
sliced sweet onion
mushrooms
red pepper
yellow squash
zuchini
top with finely chopped parsley
ADJUST SEASONINGS TO YOUR TASTE
