Does anybody have thier dates in refrigerator soaking in water just waiting for that day when you need soaked dates? It just occurred to me that this might be a good idea? Anybody tried it?

I think they might be at risk of a little rotting if kept that way too long, the water might go a little foul, you might get some undesirable organisms. You could probably get away with it in the short term.

However, if you're after something convenient like that, I know raw foodists who make their own date paste, then keep that in the fridge. By soaking and pureeing. I think the key is that sugar stops microorganisms from growing when in high enough concentration. I don't know how long the homemade date paste keeps for, I think there is an answer to that in Raw Food Real World, if anyone has it handy.

I hardly every soak my dates but if I ever do need them to be soaked, I just do it sometime before I need them for a whatever recipe that calls for "soaked dates". Soaking dates does helps them to become more creamy...and in some recipes, the creamier the better.

Anytime that I put soaked dates in the fridge I forgot that they were there and ended up trowing them out because I did not want to risk wasting the other ingreedents by adding dates that were a bit dodgy. (you have to understand that I am at the age where I forget things and I do have a big fridge)
