Made this to use up some parsnips and an overripe pear. It was well liked. I will add that this is pretty low cal, has no fats. If you want you could add avocado, or oil to richen it up, or well-pureed pine nuts or cashews in water to cream it up. It is a bit sweet from both the pear and the parsnips, so if that'll bother you, just a warning. My hubby said it would even be a nice first course for a holiday type meal.

PARSNIP PEAR SOUP

3 large parsnips (or anywhere up to a pound), peeled
1 overripe pear, peeled
1 large rib celery, sliced in short slices (so there's no long fibers)
Small piece leek, red onion, or mainly white green onion chopped into short pieces
water as needed
pinch of cayenne (even if you don't like hot stuff, put a tiny "subclinical" amount to bring out the flavors)
1/4 tsp Apple Cider Vinegar (or adjust amount upwards from there for taste)
1 tsp fresh thyme leaves, packed
a few gratings of whole nutmeg or ground nutmeg to taste
generous pepper to taste (I really like pink in addition to black)
salt to taste
1/2 large fresh bay leaf (optional), cut into small pieces first

Puree in blender or vitamix or cuisinart. Adjust seasonings including vinegar if necessary.


Note: if you have a vitamix, you could probably get away with not peeling pear or parsnip if you want those nutrients. I used the food processor for what you see in the pic and it worked fine, just run it long enough.
