My main concern about doing this is access to all of these kinds of foods, especially upon going out to eat. Salads of course could be ordered, but what about salad dressing? Are condiments and salad dressing allowed?
What about potatoes, they are a living food, are they allowed?

What is or is not allowed is really up to you. Personally I don't eat dressing, never have. When I go out and have salad I ask for lemon wedges to accent the flavor of my salad. To add to your salad ask what fresh vegetables are available in the kitchen so that you can have more variety than what comes on a regular salad. I often get squash, bell peppers, broccoli, and cauliflower added to my salads. I know some people on this board take their own salad dressings, salsa, or other food items with them.
Potatoes, in thier raw state, are like any other vegetable and can be consumed. I beleive their are several recipies on here for dehydrated potato chips, I like undehydrated potato slices with a tiny amount of salt or use them to dip in salsa. Again personally I don't dehydrate, I consume mostly whole fruits and vegetables but it's all about personal perference.

I'm in the beginning phases too. I ordered Alissa's book and DVD and am anxiously awaiting delivery. I have so many questions like you and I think the book will answer a lot of them.
Since I'm in the transitioning stages and don't really know what to get, my boyfriend and I just went through the produce department of the grocery store and grabbed all the fruits and veggies that we like. We're just starting there but still have a lot of the old foods left in our house. I guess progress is better than nothing.

Bring your own or, do as Melissa does and use lemon. I'm not fond of salads w/out dressing so I usually bring my own.

I'm assuming you mean restaurant served condiments? If so, no. Not IF you wish to be 100%. Some may not be as choosy.

Not if they are cooked. Most raw foodists don't find potatoes to be quite so good raw. I personally don't eat them raw and I'm not sure I've seen any raw potatoe chips that anyone has said they've enjoyed. Now, sweet potatoes/yams are a different story.
