Hi Again,

Another Fantastic Recipe That I Found And Modified Is For These Fantastic Zesty Lemon Bites!! They Are My New Favorite Snack, But Warning, You Can't Eat Just One!!!!!!!!

Recipe As Follows. Double Recipe If You Want To Make A Huge Batch. I Only Made One The First Time, But Should Have Done Two, Because I Ate Almost The First Batch In One Day!!

2 Cups Ground Oat Groats
1/4 Cup Fresh Lemon Juice, I Put A Little More Because I Love Lemon.
Zest Of 1 Lemon
And I Put The Entire Inside Of 1 1/2 Lemons In Also
1/4 Cup Honey
1/4 Cup Shredded Coconut
1/4 Cup Raisins
1/2 Cup Chopped Walnuts

I Did This Next Step First:
In A Bowl, Put All The Lemon Juice, Honey, Coconut, And Raisins And Mix Well. Let This Set While You Are Grinding The Oat Groats.

After The Oats Are Ground, (which I Ground In My Coffee Bean Grinder), I Moved Them Into The Processor. Add The Bowl Of Mixed Ingredients In With The Grounded Groats. Process Till Well Blended. Once Its Blended, Add The Chopped Walnuts And Mix With Spoon.

Put Mixture Of Teflex Sheet And Squish Down, Then Put Wax Paper On Top And Roll Out With Rolling Pin To Form A Huge Square. This Should Fit One Entire Square. Place Into Dehydrator At 105 Degrees For About 12 Hours. Then I Took Them Out And Cut Into Squares, And I Flipped Them Over And Put Back In For About 3 More Hours.

Oh My, If You Love Lemon, These Little Things Are Perfect!! Nice And Lite, And Have A Bite!! And It's A Wonderful Recipe For Those Lemons You Have Nothing To Do With!! Enjoy And Let Me Know!!

These are fantastic they are in the dehydrator now

the dough, that is ;)

I did find the original recipie too tangy for my tastes

so I added extra sweetning

here is what i came up with

LEMON BARS (RECIPIE IS DOUBLED, MAKES TWO TEFLEX SHEETS' WORTH)


4 CUPS GROUND OAT GROUTS
3 LEMONS, QUARTERED (ADD MORE LEMON IF YOU LIKE TANGY FLAVORS)
1 C. HONEY
1 C. DATE PUREE (JUST PUREE DATES IN A PROCESSOR)
1/2 C. COCONUT OIL (DIDN'T HAVE FLAKED RAW COCONUT)
1/2 C. RAISONS
1 C. CHOPPED WALNUTS

FIRST POWDER THE OATS IN A PROCESSOR. PUT THE OAT POWDER INTO A BOWL AND SET ASIDE.

PUT QUARTERED LEMONS INTO PROCESSOR AND CHOP VERY FINELY
ADD THE HONEY, DATES, COCONUT AND RAISONS TO THE LEMON AND PUREE WELL.

ADD THE OAT POWDER TO THE LEMON MIXTURE IN THE PROCESSOR AND MIX THOROUGHLY.

MIX IN THE WALNUTS WITH A SPOON

WET HANDS. GRAB HALF THE DOUGH WITH YOUR HANDS AND SPREAD ONTO A TEFLEX SHEET, WETTING HANDS DOWN AS YOU GO SO THAT THE DOUGH WON'T STICK. DO THE SAME ONE MORE TIME ON ANOTHER TEFLEX SHEET.

DEHYDRATE AT 105 FOR 12 HOURS. TURN AND SCORE. DEHYDRATE UNTIL DESIRED CONSISTANCY.


ENJOY!

these are really good eaither way, however, i don't like tangy foods,
thus the extra sweetners.

Thanks for sharing that recipe with us. I am very excited about it, and happen to have all the ingredients. I am going to use Agave instead of honey though, but I am sure it will come out just fine. :)

I'll post how much Agave I used, incase anyone prefers to use it over honey.

These came out horrible.

I don't reccommend them at all

I won't mention what they taste like :(

maybe i will try the original recipie instead.

Lauradee, I made them with roughly your recipe..although I used lemon and lime..2 of each...and they are dehydrating now..i just flipped them. I love them... they are pretty tart...even though I used 1 cup of honey and even added a bit of maple syrup..but they are GOOD!!! I am sorry yours did not turn out the way you wanted them too...

I am going to probably leave them chewy...maybe dry a few crispier to see if I like that...

the first batch was ok

don't know what happened

to the second one

did you use coconut oil instead like i did?
