anyone have a recipe for brazil nut milk? i'm wondering if you have to soak brazil nuts and, if so, for how long? is the proportion of nuts to water the same as for almond milk? appreciate your help.

I've made it..its one of my faves. I got a recipe from Raw Food Real World ~ I use 1 cup brazil nuts (soak for 2 or more hours, I have only soaked for 2); 4 cups water, 1tbs Lecithin (I use a bit more), 1tbs vanilla extract, 2 tbs coconut oil, pinch of sea salt and 1/4 cup agave or raw honey (I use the agave). I strain it a few times through a mesh strainer and find that it strains very clean (not a lot of pulp like almond milk). I put it in a sealed jar and it can last up to 3 1/2 days (i've stretched to 4 with no probs, but said 3 1/2 to be safe. Good luck and enjoy it..yummmy

Yes, the Vanilla Brazil Nut Milk from Raw Food Real World is one of my favorites as well!!! They have easy variations for it to turn it into chocolate or strawberry milk. We've tried the chocolate milk and really liked it. My 4 year old loves it and loves to watch it being made.
Here's yummy chocolate milk (made from the vanilla brazil nut milk). :D

What does lecithin do for the almond or brazil nut milks? I usually have mine plain without honey or anything else.
Also, is agave nectar better than honey? If so, why? I never heard of agave nectar before coming onto this site.
I must get a nut milk bag though (or go to the hardware store like Samuel) as I think I waste a lot through being unable to properly squeeze the pulp.

The lecithin does make the nut milks a bit creamier, plus its a great healthy addition. The agave is better than honey because its very low glycemic and adds a nice flavor.

I use the same recipe from Raw Food Real World and love it.
I don't use the Lecithin though and it is still really creamy and silky.
I usually soak overnight though; I just put it in to soak before bed and
make the brazil mylk when I wake up.
My raw curious friend was very impressed and almost drank it all herself.
My kids prefer the brazil mylk over almond mylk for some reason.

Angelina, I have been meaning to try it with the lecithin. Would you mind telling me which brand and form you used? Doesn't it come in both liquid and powder? Do you think it makes a difference in the milk which one you use?

I get mine from the Vitamin Shoppe, the brand name is Lewis Labs, it is the granular form. I've seen the liquid also, never tried....hmm..I'm not sure which would be better to use?? I haven't used the liquid so not sure if its oily, that with the coconut oil might make it a bit too oily?? Let me know which you decide on and if the liquid how the results are.
