Hi! I made this tonight out of veggies I had in the fridge. I was in the mood for "pesto" but I wanted a soup, so I invented this on the fly. It was delicious. I had 2 bowls for dinner. I was too full to eat anymore and completely satisfied.
1 big handful of fresh spinach
1 med tomato
1/4 chopped carrots
1/4 cup red bell pepper
1 teaspoon chopped jalapeno pepper
1/4 cup white onion
1 handful of fresh basil leaves
small handful of raw cashews
1/4 cup olive oil
1 clove garlic
1/2 cup fresh cilantro
two dashes of turmeric
Stick in blender. Press button. Blend for a minute or so. Pour in bowl.
Instant health!!!
