Pesto Lovers beware! You will want to eat this with a spoon in mass quantities! This is adapted from a recipe I had to beg for ;) We have a Vegan restaurant in town that does a raw night once a month. I've had some long chats with the owner, Ian, and he finally agreed to hand over his pesto recipe.
I changed it a bit and found you can omit the garlic and it still tastes awesome; besides, since it doesn't stink like garlic, you can eat it every day and people will still want to be around you. :eek:
Here is what I am now naming BASIL BLISS! :p
Add the following to a food processor:
4 oz. basil, washed, de-stemmed.
1/2 C olive oil
1/3 C water
1/4 lb cashews (you can soak them first if you want) - Ian uses macadamias but I find them to be very expensive. Cashews or pine nuts work great.
1/6 C raw apple cider vinegar or lemon juice
1/4 T minced garlic ( OPTIONAL!)
1/4 T sea salt
Process until smooth.
Pour over everything! Great in veggie wraps, 'pasta', on manna bread with tomatoes, as a veggie or cracker dip...heck, I even brush my teeth with it! ;) Just kidding.
