View Full Version : Refrigerated left-over enchilada and made soggy

The enchiladas from Alissa's book came out great but I had way to much left-over and put it in the frig overnight and it is really soggy...I think I'm going to have to throw it out! Does anyone have any suggestions...do I leave it in a container on the counter all night?

Also, I want to try making Alissa's pizza and calzones...can I substitute those buckwheat sprout, etc. for something else. The only sprouts that I can get around here are alfalfa, and I'm not sure that I want to try sprouting...yet!

If you have a dehydrator, throw it in there. IF not, let it come to room temperature and eat as is.

For future reference, do not assemble them until you are ready to eat them in situations where you may not eat them all when you originally prepare them. Raw enchiladas are no different than cooked ones in the fact that if you leave them sitting, they will get soggy. You can actually make enchilada wraps ahead of time and then freeze. Be sure to put a piece of wax paper in between each wrap in the freezer before putting them in a freezer bag or in my case, a vacuum sealed bag.
