I'm looking for a RAW version of succotash;
the SAD version is sauted in olive oil; potatoes, red potatoes, carrots, onions, garlic and fresh herbs. It was/IS so delicious. Any suggestions?

Does anyone have the 'regular' version of succotash? the corn, lima beans etc? RAW version! would like to try that one. the above one was too much work and it was o.k. but too much dicing and slicing. Joz
wyjoz, I would take equal amounts of:
fresh corn, cut off the cob
Fresh baby lima beans, shelled
add:
nut cream to taste
sea salt and paprika
Mix well. Dehydrate covered untit as limp as you like.

I have purchased the baby lima beans previously and now I can't find any. So I'm waiting. We have a Farmers Market here and they said it's not in season yet. I looked in the Organic Frozen Vegetables and no luck. So I'm waiting.
