Last night I had company so I made a raw dinner. We had Pad Thai and purple pockets for supper and carrot cake with coconut cream frosting and banana mango ice cream for dessert. It was really good. Last night when I made the frosting it was smooth and creamy and I poured it over the individual pieces of cake. It was really good.
BUT.......
This afternoon we had leftover cake and frosting and the frosting (after sitting in the fridge overnight) was now solid and creamy and had the consistency of buttercream frosting almost. It was the best EVER! I couldn't get over how great it tasted. My 8 year old remarked that it was the same texture as regular frosting just as I was thinking the exact same thing. Next time I make a cake and this frosting again I will pour the frosting over the cake the night before and then the next day when I serve the cake it will be just like those old nasty cooked versions, but way better! Sort of like a ganache. Yum, Yum, Yum!
I sort of just threw things into the blender and taste tested until it was good, but here is the recipe to the best of my meager memory :D
cream of 1 coconut (I put my cocount through my champion with the screen attachment and got cream and cocunut flakes and used the cream from that)
1 cup soaked cashews
vanilla
agave nectar (maybe 1/4 cup) to taste
coconut butter (about 3 spoonfuls)
some water t o give it the right pouring consistency
I think that was it, but I'm not 100% sure. It was the coconut butter that gave it that wonderful smooth creamy consistency.
