View Full Version : Lots of Uncooking this Weekend!

Well, since I had a 3 day weekend, I decided to jump in with both feet and try some recipes out of Alissa's book I got for Christmas, and ya know what?..... None were difficult, and..... I liked almost everything I tried! Here's what I have done so far:

Pesto stuffed mushrooms (made them twice because they were so yummy)!

Indian Spinach Dip - this is the only thing I wasn't crazy about, but dh liked it, so all was not wasted :)

Corn Chips - made a 2nd batch today - dh also likes these, yeaaaa!

Pizza Bread - long recipe of ingredients, mostly spices, but it wasn't hard to make. Alissa gives very good instructions and tips like putting it in two batches into the food processor, so I didn't get frustrated ;) It is so good, now I just need to decide what to put in them or on them!

Mock Salmon Pate - this has a wonderful flavor and was so simple to make

Carrot Pecan Burgers - dehydrating as we type, tasted good going in.

Date Nut Torte - I have this almost every day, it is so fudgy delicious!

I'm so glad I am pushing myself to keep trying new things. I think at first I was uncomfortable because it just feels different to be working with just a food processor and fruits, veg, and nuts with most recipes. It was out of my "comfort zone". But now it is beginning to feel normal to me and things are getting easier and quicker to throw together. I don't think I could have done any of this without the support I get here on this forum. I found that mock tuna with a slice of tomatoe and shredded romaine is awesome on Pizza bread !

I also just got alissas book I have made the mock salmon pate my husband loved it and the creemy Itilain\ dressing. and the thi padi.

Nice post. Alissa's book is the greatest. I already have favorites and need to push to make some of the recipes I have yet to try. More adventure awaits. You noted the Indian Spinich Dip was not a favorite. I made it and felt the same. It just needed something for me. I added about a half cup of ground fine macs and re-blended and viola! The creaminess factor. The fat grams are increased of course, but I really liked it.

Made the butternut squash noodles and golden curry for dinner tonight---sooooo goood.

those are all among my favorite recipes!

Here's one thing I love to do with my pizza bread... make her dill cream cheese, put some on the pizza bread, and a slice of cucumber, and viola! cucumber sandwiches! I think I had to add just a little salt to the cream cheese, but it was so yummy!

But yeah, even the "complicated" recipes in Alissa's book are easy the way she lays it out for us!
