This is one reason why I like eating like this.
Come home from work tonight and had nothing planned to eat. Opened fridge and spotted the collard leaves I bought yesterday. Went thru them and picked 4 nice size ones and diced up a tomato, some purple cabbage, onion. In my food processor threw a few almonds, carrots, half a avocado and spices and blended it up. Spread on collard leaves some avocado dressing I made at lunch then layered sprouts, almond/carrot mixture, tomato, cabbage, onion and rolled them up! Amazing in less than 30 minutes made a delicious meal. :)
