View Full Version : Quick! Help me modify Pesto 'Shrooms

I'm going to a potluck dinner on Sunday and I want to bring some finger food. I like alissa's pesto mushrooms but I find it a bit heavy and I was thinking about using the lite pesto recipe instead for the stuffing.
OR marinating/dehyrating the shrooms and then piping the spinach dip into each one. Do you think either of these ideas will work well? I don't want to waste any ingredients experimenting on something that might not go over well with SAD eaters. Thanks for any input!

I always marinate my mushrooms in Nama Shoyu then fill with Gus's Pesto and then dehydrate for a few hours. All the SAD eaters I know that I've fed them to LOVE them! The only thing I do a little different is use about 1/2 spinach and 1/2 basil instead of all basil.

Trust me, these are my old standby for bringing to SAD gatherings... and they're always one of the first things to go!

Do you marinate the mushrooms in just nama shoyu? no oil?

Gus' pesto is the same pesto used in the "Pesto Stuffed Mushroom" recipe. I find it too heavy. Have you ever tried another filling?

yup, that's all it takes, at least for 10 minutes... doesn't need long :) If you have something to keep them warm in, that would be perfect, if not, don't worry, they'll still go!
