I have been on the phone talking with Glaser in Florida trying to determine if the Pistachios they sell are "really raw" and not heated to extend shelf life. The person can not tell me for sure if they are "really raw" because they say their suppliers change and they would have no way of knowing.

If you buy "really raw" pistachios online, please send me the link.

I don't buy them from the local health food store because after contacting the supplier for them, I found out they are heated to extend shelf life.

I believe the ones I buy from Jaffe brothers are truely raw.
You might want to call to verify, but I use to get them from my coop
run by long time raw fooders...so I took their word for it.
they are not toasted that's for sure. I love them and am addicted to them.

I'd LOVE a bucket of raw pistachios! My daughters, especially the little one, eat these like crazy.
Thanks, Samuel.

nogmo, they said "raw" at my local health food store until I launched my own investigation into the matter. Turns out, they are blanched to preserve shelf life.

You really can't trust signs that say "raw" in health food stores, I'm sorry to say. One of my local health food stores puts "raw" on the little baggies of bulk items for anything that isn't "roasted". A lot of people think "raw" just means not roasted and salted when it comes to nuts at least. I found out at one store that the bulk nuts are all pasteurized, I have yet to check into this. After talking to the people in another store, I really don't think they're purposely trying to mislead anyone, they just don't realize there are raw foodists out there who have a stricter opinion of what raw means.

But since it's not regulated, stores can throw the word "raw" around any way they like. It's really unfortunate for us because it makes it very frustrating to find out what really is raw.

Blanched as in dunked in hot water? Is this different than pasteurizing?

Pasteurizing is the word used for heating liquids to preserve them and kill anything harmful in liquid. (however, this kills enzymes)

So basically, they are both the same. One means heating solids and the other means heating liquids.

Just wanted to add that anything that says it has been flash pasteurized is not raw. (too bad because I used to like BoltHouse Farms Vanilla Chai Protein drink) However, it would be possible for some enzymes to survive, but why drink something that is half alive when you can drink something that is raw and 100% living.
