I've had my pineapple for awhile and I am trying to find a way to use it in a meal. Has anyone prepared a dish using pineapples?
If so and you have the time could you please share it with me.

I would suggest my Pineapple Cucumber Gazpacho. It calls for 5 cups of Pineapple (3 cups blended, 1 cup of diced and 1 cup of juice).

I was just getting ready to mention Samuel's Gazpacho...but he beat me to it!
Also, if you have Alissa's book, she has a Pineapple Sundae and a Pineapple Cake (I've tried neither).
You could also peel, cut up and freeze for later use in smoothies or sorbet or add some to banana ice cream.

:( I wish we could afford her book but right now we just can't.
I really do appreciate all the help I'm getting from my friends here.
Everyone speaks so highly of the book maybe one day I'll be able to get it.

You can also juice it - I just juice the whole thing and take it to work with me in a mason jar... mmmm
Or you can make a sauce out of pineapple to put over banana slices or raw ice cream as a dessert.

pineapple is such a marvelous fruit that I never do anything but eat it plain...I wouldn't want to adulterate the taste. I love every tasty mouthful of a ripe, juicy, sweet pineapple.
