I dont but I gave in to temptation today and bought some vacume packed ones that said they had to be consumed within 3 days of opening. I have not had olives for months and I reckoned that this was as near to fresh and raw that I was going to get. I promise that I will now go at least 6 months before i do that again and hopefully by then I will not even want them.

There is TONS of information on this forum. As was mentioned above, type in raw olives in the search box (above under the banana) and settle in to read. It may take a while, but you will get your question answered, for sure.

Your local deli is usually not the best place for truly raw olives. As of this writing, the only places I can rely on that will explain to me exactly why they say their olives are raw are Adam's Olives which is local and sells at farmers' markets, NFL, and Living Harvest (???? I think that's their name but I'm not sure -- dont' have the time to look it up right now, but they're mail order and located in Northern California).

Because they're in a bin instead of a bottle doesn't mean they're raw.

I guess it depends on "who" you ask .
Just ask your deli if they have been heat treated.
