Celeriac and Green Apple Soup
This is a great soup. If you are looking for some change in your raw diet. You definitely need to explore new soup recipes. They break the routine and keep things interesting.

I've been eyeing this recipe in my cookbook; is the celeriac root hard
to find? I'm sure Whole Foods or Central Market carries it.
Glad you like it; it gives me incentive to try it.

punky, IMO Whole Foods should have it for sure (also called celery root). I've even started to see it more often at other stores too.
It's a great veggie for the winter when other pickins are slim. The fragrance is amazing.

The soup looks very pretty. What does it taste like? Is is similar to cream of celery soup?

Punky, sorry for the late reply. WF sells celeriac (celery root). Main stream grocery stores sell it as well and if you are in a pinch, you can also buy it at Super Wal-Mart.
Autumn, it had an aroma like celery, but was actually pretty mellow tasting. The green apples is what wakes it up. I actually diced some green apple and added that to the finished recipe and stirred it up. It gives it a little more character I thought.
