I've been trying to think up some new Christmas cookie ideas....
ginger stars
chocolate chip cookies
pumpkin seed with carob cookies
candy cane and Christmas ball macaroons!

Does anyone have a warm beverage idea that I could make in my Vitamix, to sip with these cookies?? I miss hot chocolate on a wintery day!!!

oh they're gorgeous, thanks for posting.

You could grind up some raw cacao in the coffee grinder, and blend with a little cinnamon and warmed almond milk. You could add a banana if you want it creamier, a date if it's not sweet enough for you.

Also you could gently warm brazil nut milk, it has a sort of mocha taste.

oh they look way too yummy!!! Are they your own recipes? or did you get them here/from a book? I would love the candy cane recipe most of all!! actually that whole plate with the candy canes looks great!!

Hot Chocolate from www.rawguru.com

4 cups almond milk*
1 sun cured vanilla bean (seeds only)
4-6 ounces raw peeled cacao bean pieces
3/4 cup agave nectar or yacon syrup or soaked dates
1 tsp. maca powder (optional)
1/4 tsp. cayenne powder

How to: Add the nut milk, vanilla bean seeds, maca, raw cacao bean pieces, and a sweeter of your choice into a blender cup. Blend on high speed till creamy and smooth. Strain this mixture through a strainer or nut milk bag and add back into the blender. From here you can blend it up till warm or drink as is. Before serving, add some hot pepper to it for a warm sensation. Serve immediately.

*Almond milk is made by soaking 2 cups of almonds and adding them to 3 1/2 cups pure water with 2 pinches of salt and blending till smooth, then straining the mixture through a nut milk bag. Almond milk keeps for 1-3 days in the refrigerator.

I made up the recipes as I went along...but luckily I wrote them down!!
Ginger Stars:
2 cups gound oat groats
1 cup cashew "flour" (cashews gound in a coffee grinder)
1/4 cup agave
2 tsp. cinnamon
3 tsp. ginger
6 dates, 1 cup raisins--soaked and pureed
--roll out dough on a non-stick surface (I used wax paper)
--use cookie cutters for shapes, then dehydrate until "hard"

Chocolate chip cookies
1 3/4 cups cashew "flour"
3/4 cup ground oat groats (or use all cashew flour for a much sweeter dough)
1/4 cup agave
2 tsp. vanilla
1/2 cup coconut oil
chocolate chips (blend 1/2 cup coconut oil, 1/2 cup carob, 1/2 cup cacao
put mixture in freezer, then chop into chunks)
--form into balls, roll in cashew "flour" and refrigerate

Pumkin Seed cookies:
1/2 cup pumpkin seed butter
1 cup pepitas
1 tsp. pumpkin pie spice
2 tsp. cinnamon
1/4 cup maple syrup or agave
1 cup ground oat groats
1/4 cup carob
---form into balls, roll in carob and dehydrate until firm (I left in overnight)

Coconut macaroon candy canes:
2 cups cashew "flour"
3/4 cup ground oat groats
2 tsp. vanilla
1/4 cup agave or maple syrup
2 cups dried shredded coconut
water and meat from one young coconut
--mix in food processor, shape into balls or candy canes, and dehydrate
--for the red stripe, I mixed a handful of strawberries with about 1/2 cup coconut oil in a blender. I used a pastry bag to pipe in on cookies. The chocolate swirls are made with the chocolate chip mixture (noted above) in a pastry bag. Use shredded coconut for "snow". Gogi berries are the snowman's nose and scarf!!

Raw Christmas cookies can be as fun to make as SAD cookies!
Feel free to change the amounts of ingredients to how you like them!

Lemon coconut cookies:
2 cups shredded coconut
1/2 cup coconut butter
2 tsp. vanilla
1/4 cup agave
1/2 cup cashew "flour"
juice from 3 lemons
--mix together, shape into balls, refrigerate!!

Hello Mysticat!! You made me one happy 'customer'... or should I say consumer!! I have always like Ginger cookies/ginger snaps and I made your Ginger Stars and oh boy were they GALACTICAL!! Simply out of this world beyond the universe!!! I simply loved it!! Though I was hesitant to make it for the oats were not sprouted but I did anyhow and I loved it!! Don't tell me you are supposed to sprout them first? Either way it tastes good! However just would like to know, am I supposed to sprout the oats first?

I have my fingers licked with each cookie I cut.... :D

Mysticat....I am so envious of your ability to just "create" like that! It really is a wonderful talent in the culinary arts. Perhaps we'll be seeing a recipe book by you in the future!

P.S. Your cat looks like one we had a while back. He had the greatest personality in the world! We miss him incredibly. Your pics always put a smile on my face!

.... I am not being kind I am being honest nothing but plain honesty and it is such a delight!! I finished the entire batch in less than 24 hours!!! Yup all by myself and I raved about it to my non-raw friends and they wanted a try but I told them there are none left!! You are a saviour to me!!! I love Mysticat's mystical Ginger Stars!!!! ;)

Truthseeker...Unfortunately, I HAD to eat all these cookies, since they were just "sample" batches for Christmas! But I will be making more, and I'll save you some!!

Yes, Smoothie....I used a coffee grinder. It ground the cashews to a "flour-like" texture.

.... to source and finally found a star cookie cutter! So I made another batch yesterday and finally call it Ginger Star! This morning only 3 stars left. Some friends came by yesterday and I served those Ginger Starts and when towards the end only 1 cookie was left on the plate... you know how its like, none would go for the last and all would want it at the same time.... it was funny!! Thank you once again Mysticat!! Now I shall try the Chocolate chip!!! hmmmm I can already 'taste' how good it will be!! ;)

Oh my gosh, you have no idea how glad I am I made time to pop in today. :) Thanks SO MUCH for sharing your totally amazing Christmas cookie photos and recipes!! :D My daughter just turned 4 last month and has told me several times that she wants to "bake" some Christmas cookies with me. I just haven't been able to bear the thought of making SAD cookies this year (that's what we made last year, I just discovered raw a couple months ago) and I was kind of disheartened as to how I could make raw cookies in a festive way and your last photo just made my day!! :)

RawPriestess shared her way of making "hot" cocoa in another thread that sounds easy with simple ingredients, I'm hoping to try it tomorrow, it snowed again yesterday and I'm really starting to crave warm foods!!


I make a hot cocoa this way, I use almond milk, dates, a dash of cinnamon, carob/cacao powder, a dash of salt (yes this is important) a dash of cayenne to add heat.and a tad of cinnamon, then I blend in a blender, and then warm to finger warm.

There was another suggestion about heating up spiced apple cider. I'm not sure how to make that though! I'm looking into it... I looooove warm apple cider and it would be great to have a raw version to make!

For the coconut, do you take fresh coconut and then dry it then shred it or do you use frest coconut meat for the Lemon cookies?:)

For the shredded coconut, I used organic dehydrated shredded coconut that I bought from Whole Foods ( I don't know what temperature it is dehydrated at, if it is considered raw, but I follow more of a "high-raw" than a totally raw lifestyle).
In the lemon cookies, I used both the shredded coconut and a young coconut that I cut open (using the water and meat).

Couldn't you just juice a couple of apples, add some spices and heat to about 105 degrees? I guess I would use cinnamon, but someone else may use other additional spices. Sounds great. I just checked in today and I'm so glad I did, I have to make a trip to buy some more cashews, but my kids and I will definitely make these!! Thanks for your creativity Mysticat....you RAWK! The pictures are definitely an inspiration!

mysticat, i want to try making most of your cookies for christmas day. how far ahead of time do you think i should make them? how long do the ginger cookies take the in dehydrator, approximately? and what about the stuffing nuggets?

the others i could make the day before? since they just need to go into the fridge.

I left the cookies and nuggets in the dehydrator at about 100 degrees, for about 20 hours. They probably didn't need to be in that long, but I like to leave them in overnight and while I am at work the next day. (Maybe even 12 hours would be enough). The refrigerated ones just need a few hours to firm up.
When I made them, I had some left a week later, and they were still yummy. My plan is to make them a few days before Christmas, and keep them all refrigerated.( I work long hours at my job right before Christmas and will not have time to make anything the couple days before).

It's funny you should ask that .....about the mint. I just bought mint leaves yesterday. I wasn't sure what to do with them yet, but I already dehydrated them and put them in a coffee grinder. I was thinking of adding them to a cacao fudge recipe. We'll see....

If you ground them up teeny tiny...and mixed with the cocao/carob powder,..maybe you'd not even notice it's the actually leaves.

Isn't it great you won't have to "cook" them to find out? Though, I have found out that the dehydrator will bring out the flavors of spices... so... I guess we'll both have to wait and see what we find.

Just cashews in a coffee grinder.....it makes a wonderful "flour" for basically any kind of cookie!!!
(P.S. to everyone----I would love to see pics of the cookies that you make, and if you change any of the ingredients, like the type of nut used, I would be interested to know how they tasted!)
I just made a batch of the lemon cookies, only I substituted with LIME! Yum.

Renee, there is edible peppermint essential oil, here is a link to one that is made for food, but can also be used for other things. Just click on peppermint oil on this list. I gave you this link instead of the direct to peppermint because they also have some other natural flavor oils, orange, tangerine, anise, etc., in case you want to see. There are tons of fake flavorings here too, but some are natural.

Some baking shops sell this stuff (I think even maybe some Michael's craft stores in the baking department).

I used their natural anise oil and orange oil in the past and the quality was great. All you need is like a couple drops of the stuff. They are better than extracts, especially if you're doing something mock chocolate.

I did 2 batches of Ginger Stars so far and though I was intimidated by the Chocolate Chip cookies what with the heavy ingredients (don't get me wrong I love coconut oil) however I took the risk of trying it out and trying it out I did and only regret is WHAT TOOK ME SO LONG TO DECIDE IN MAKING THIS ONE!!! It was HEAVENLY!! Oh boy! It tasted far better once fridged or even the next day!!! I was doubtful how the chips were gonna turn out, you know without any honey/agave. But it turned out awesome and my favourite was bittersweet chocolate and this is close to it!!!

You deserve the stars you got for starting this thread and making many raw cookie monsters like me happy happy HAPPY!!! *burp* oops excuse me!

Oh pictures??! Sorry I devoured them in less than 24 hours!! Yes I ate nothing but these cookies and kept coming back to the fridge! All gone only left is sweet memories and a big grin etched on my face!! :D


So this is how my rating would go :
Ginger Stars - GALACTICALLY OUT OF THIS WORLD!!
Chocolate Chip Cookies - HEAVENLY.... pure heaven ;)

I personally don't use honey, but I've seen in recipes posted by others that they can be used in place of each other. I don't know how the sweetness of each compares, so you might want to start with a little honey, then taste to see how much more you would like. As for the dates, I buy whole pitted dates, and just put a few in water to soak until softened.

hmmm....I would say at least 2 dozen per batch, possibly more (sorry- I didn't keep track!) Depends on their size also---I used a melon-baller for the round ones,and a 2 inch cookie cutter for the ginger cookies. Actually, I got about 3 dozen of the ginger ones.
Here is a picture of the cookie platter I just put together...
(I changed the ginger stars to gingerbread men!)

Hmmm...good question....
What if you tried just using some kind of nut that has been ground up, like almonds or walnuts? It might not taste exactly the same, but you might create something that tastes even better! Good luck!

I made the coconut macaroons, but I didn't make them into candy canes...just regular shaped cookies, I did add more shredded coconut to firm up the cookies because mine were really soupy....I also changed the vanilla extract for mint...they were awesome! Thanks for the recipe! My non-raw boyfriend loved them!

I just had to bump this up because let me tell you....!!!

mysticat.....GENIUS---PURE GENIUS with the chocolate chip cookies!!!!! They are out of this world!!!!! the cashew flour is what really made the cookies!

a few modifications that i did---i used all cashew flour, used all cocoa and added agave to the choco chip mixture until it was "bittersweet". I think i will use less oil next time and it was a little bit oily for my liking.....BUT HOLY SMOKES WERE THESE GOOD!!!! i couldn't stop snacking on the batter and then i had to put in the freezer to let the choco harden up a bit so i can form them into balls!

Glad you bumped it up, Rachel, as I'd been meaning to rave on these cookies myself. I've made the chocolate chip cookies and they are downright dangerous...LOVE THEM!!!

My other favorite is the Ginger Stars, or as I named them Ginger Stripes, because I was too lazy to cut out stars and just ran my pizza cutter over the dough making strips (or stripes) out of the batter. Fantastic...I even ate them for breakfast!

I made the chocolate chip cookies and they are AWESOME! I didn't roll them in cashew flour and I ended up putting them in the dehydrator...they were warm, soft and chewy and the chocolate chips were so close to the SAD ones it was scary!

I plan to try the ginger ones later this week as I've always loved Gingersnaps. Thanks Mysticat! :D

Oh Rawkinlocs!! I was a slave to Gingersnaps before raw too and I have to warn you that the Ginger Stars were the first recipe I tried and my oh my.... it just cannot be simply described. I was hooked on them Ginger Stars (made the batch 3 times and I ate most of them) that I went all out to just find a star cookie cutter so it fits the name! (i was using animal shapes). I was so hooked that the next cookie I decided to make was the Chocolate Chip Cookies and another out of this world experience! Perhaps I should do it again and have them dehydrated a little to have that soft chewy effect. Question, does not the coconut butter melts when you put them CCC in the dehydrator.

Here is the pic below...

They don't really get firm like they do in the fridge (I did both) but rather it's like eating cookie dough...which I didn't mind one bit...they were still delicious!

I left them in overnight and into the next day (waiting to see if they would get firmer) but they stay kinda soft and doughy...maybe next time I'll add a little more of the "flour" or maybe even a tiny bit of ground flax meal to make it firmer (??)

...
I forgot to mention that I kinda "folded" some of the chips in and then after shaping and flattening the cookies out in my hand, I took some chips and just kinda gently pressed them into the tops of the cookies.

Sorry, I know it's an old thread but I'm just getting around to it. :o

For the dates/raisins, can someone tell me if it is supposed to be dates AND raisins or dates OR raisins? I have all the ingredients measured out and waiting except the dates/raisins.

Does anyone have a warm beverage idea that I could make in my Vitamix, to sip with these cookies?? I miss hot chocolate on a wintery day!!!

this stuff looks so amazing. can you share your recipes? i'm new and i don't know anything about raw food! i plan on getting a dehydrator though, so i'd like to have some yummy recipes for when i do. i only see the ginger stars recipe in a quote, and i'd love to try the other stuff. hopefully i can make it for christmas for my family! they think raw/vegan stuff is gross.
oh, and what is vitamix?

I made up the recipes as I went along...but luckily I wrote them down!!
Ginger Stars:
2 cups gound oat groats
1 cup cashew "flour" (cashews gound in a coffee grinder)
1/4 cup agave
2 tsp. cinnamon
3 tsp. ginger
6 dates, 1 cup raisins--soaked and pureed
--roll out dough on a non-stick surface (I used wax paper)
--use cookie cutters for shapes, then dehydrate until "hard"

Chocolate chip cookies
1 3/4 cups cashew "flour"
3/4 cup ground oat groats (or use all cashew flour for a much sweeter dough)
1/4 cup agave
2 tsp. vanilla
1/2 cup coconut oil
chocolate chips (blend 1/2 cup coconut oil, 1/2 cup carob, 1/2 cup cacao
put mixture in freezer, then chop into chunks)
--form into balls, roll in cashew "flour" and refrigerate

Pumkin Seed cookies:
1/2 cup pumpkin seed butter
1 cup pepitas
1 tsp. pumpkin pie spice
2 tsp. cinnamon
1/4 cup maple syrup or agave
1 cup ground oat groats
1/4 cup carob
---form into balls, roll in carob and dehydrate until firm (I left in overnight)

Coconut macaroon candy canes:
2 cups cashew "flour"
3/4 cup ground oat groats
2 tsp. vanilla
1/4 cup agave or maple syrup
2 cups dried shredded coconut
water and meat from one young coconut
--mix in food processor, shape into balls or candy canes, and dehydrate
--for the red stripe, I mixed a handful of strawberries with about 1/2 cup coconut oil in a blender. I used a pastry bag to pipe in on cookies. The chocolate swirls are made with the chocolate chip mixture (noted above) in a pastry bag. Use shredded coconut for "snow". Gogi berries are the snowman's nose and scarf!!

Raw Christmas cookies can be as fun to make as SAD cookies!
Feel free to change the amounts of ingredients to how you like them!

granola.revolution, the recipes are all on page 1, but I've quoted them again for you. A Vitamix is a very high-powered blender.

I was in Costco and they actually had Xmas & Halloween items - EEEK!

I also had this thread up as I was passing on a recipe and thought well if that time of year is rolling around again. . . . :eek:

. . . . I would bump this up. Mysticat has two section of written recipes on this page so dont miss both. I have made the Choco Chip and they are fab! I am now going to try the lemon Macaroons - yum!

I just made the frosting the other day to top RP's brownie recipe, what a hit with everyone who has tried them including a very SAD eating family member who was visiting yesterday! Yeah!

I made the ginger cookies last year but never posted pictures of them. Mysticat's recipe was really yummy. I don't remember if I tweaked the recipe at all, though.

I am so glad I found this thread... just in time for chirstmas. I will be making at least one of these when I have a day off... they look sooo yummy (drooling).

I read all the posts and a while back someone posted a warm cocoa recipe, sounds great. Someone also mentioned that they dehydrated mint and then ground it up, you should try adding the ground mint to the warm cocoa, that would be great!! And would probably be a fantastic treat for kids when they come in from playing out in the snow. Thanks for all the recipes... I too am waiting for your cookie un-cook book. ;)

Hi Eilene, I'm not Mysticat but I've made the ginger cookies 3 times in the past 2 weeks (they're THAT good!).

I think you can use either... but I used fresh ginger, and just minced it as small as possible. I didn't have powdered type, so I just used what I had. If you use fresh make sure its chopped really small otherwise you'll get a big taste of ginger every few bites. ;)

Lemon coconut cookies:
2 cups shredded coconut
1/2 cup coconut butter
2 tsp. vanilla
1/4 cup agave
1/2 cup cashew "flour"
juice from 3 lemons
--mix together, shape into balls, refrigerate!!

Hi, I just made this and the batter is completely liquid. Do you know about how much juice the three lemons gave you? Mine gave a lot and I'm just wondering what I did wrong!

My mom made the lemon-coconut ones (she's not raw) and we both loved them. I also made the chocolate chip ones and they were just like the real thing. I love them!!!!! The ginger stars are next on my list, gotta get to the grocery store first. :) Thanks so much Mysticat!

I love this thread too. I am totally addicted to the Ginger stars (mine are usually round or square) I love these cookies! They are a staple in my home. I also have to have the Chocolate chip cookies. I use less oil though. These taste amazingly just like the real ch chip cookie dough. ( I buy raw chocolate & break that up into the dough instead of making it! The last batch I made (last week) was gone in 3 days. I'm lucky I didn't gain 20 lbs!!!

For grinding grains/nuts I use my coffee grinder. My FP is just for mixing stuff and not grinding per se as the coffee grinder would do. Thrift stores here great place to find them for about $4.99 or less. I don't use mine often as I mainly eat super simply, but I still wow and love all the pictures. Just a time issue choice and nothing more.

Oh, best to you on your violin gigs.

For a warm beverage, you can heat cashew nut milk in the vitamix and put it in yerba mate for a mate latte - one of my favorite rich warm treats. Or make the cashew nut milk with raw cacao powder and there you go!

Cashew flour is simply cashews ground up in either a coffee grinder or a Vitamix. You can probably use a Magic Bullet as well...anything that will grind for you...if you can grind, say flaxseed in it to make flax meal, then it should work.

3 tsp. sounds like an awful lot of ginger to me if it was dried. I would say fresh - and it would taste better too.

I made the ginger stars (mine were ginger hearts) and they came out GREAT! This was the first recipe that my whole family absolutely loved that we've done in the dehydrator. I think I'm going to try the cinnamon rolls next and the lemon cookies! =)

Question about the lemon balls or cookies.. when you measure the coconut butter is this 1/2 cup of warmed coconut butter that is just softened by putting the jar in a bowl of warm water? Or did you all scoop it hard right from the jar?

What is oat groats?

Can I use cacao chips I get from health store for raw still or do you have to make the chips...assuming that is the recipe for them in the recipe? Is the carob, carob powder?

Oat groats are Raw oats.
The chips from the HFS are not Raw. Cacao nibs I've used as "chips"
And yes, I believe the carob is carob powder...

My daughter made the lemon coconut cookies and they are THE BEST, BY FAR, of any raw cookie or bar that I have had to date. They are as good as any cookie you would buy in a store or bakery or at a bake sale or at a tea shoppe or WHATEVER. They stand up to ANY SAD recipe! So if you have not tried them, go for it! These are definitely coming along for Thanksgiving treats. I will have a hard time keeping the SAD folks away from them!

Oh my goodness, COOKIES!!! My mother and sisters and I used to spend HOURS and HOURS every Christmas break baking and decorating hundreds of cookies... we would then make big Christmas Boxes full of these goodies + a photocard of the whole family wishing our friends and family a Merry Christ's Birth Season, and then we would distribute them door to door to all our dear ones!

We also used to Carol in the Park, sing carols to the neighbors, and sing in Christmas Concerts in the churches in town every year. "O HOLY NIGHT" in four-part harmony Andrews' Sisters-style was our signature piece!

Your Cookies thread just brought back some lovely memories!!! Thank you for bumping it, Annie!

I made the Ginger Stars yesterday. I didn't have a cookie cutter, so I just rolled them into balls, mashed them with my thumb and then dehydrated them. They are sooooo good.

I brought them into work with me and gave them out to my co-workers around my floor. Everyone loves them. One lady even came to my desk with a Ziplock asking for 3 or 4 to take home to her husband because she thinks he will love them and maybe she can get him to take an interest in raw foods. I begrudgingly gave her the extra cookies - it was for a good cause, I suppose. LOL :)

Raw Food Gingerbread Men

Cookies:
1 and 1/2 cups almonds (sprouted and ground to flour)
1/4 cup agave
1 vanilla bean
1 teaspoon fresh ginger, grated
1/8 teaspoon cinnamon
pinch sea salt

For Icing:
1/2 cup young coconut meat
1/2 tablespoon coconut oil, raw organic
2 teaspoons agave
1 teaspoon vanilla extract

Directions:
1. Combine all cookie ingredients in a mixing bowl and stir vigorously until well mixed.
2. Use a rolling pin to roll cookie dough out, then use a gingerbread man cookie
cutter to cut into cookies.
3. Place cookies on a dehydrator Teflex sheet or wax paper and dehydrate at
105 degrees for 2 hours.
4. Flip cookies and dehydrate an additional 2 hours.
5. Make icing by blending or food processing all icing ingredients until smooth and
creamy.
6. Use or gingerbread man stencil, to ice the cookie, and/or decorate the cookie by
using a cake decorating bag.

7. Dehydrate for an additional 1-2 hours. Then store in the refrigerator.
Serves 6

I am so excited to see this! Christmas cookies have always been my achilles heel and I wasn't sure what to do this year now that I'm raw. And the best part is that there are recipes that don't require a dehydrator.
