View Full Version : Question about the corn and flax mixed - tortillas

Okay, one time a woman on another board I'm on posted a recipe she concocted for "corn flakes" and some of the ingredients were corn, flax and orange juice amongst other things. Alissa's corn tortilla recipe also asks for corn, flax and orange juice amongst other things. Both times I attempted both recipes after dehydration there was an awful bitter taste. I THINK both times I had ground flax already that I had ground up prior and it was a combo of brown and golden seeds.

So my question is, would anyone happen to know what mixes with corn to produce the bitter flavor? Is it corn + golden flax, corn + brown flax, or corn + orange juice?

To anyone who has made the tortillas (or Alissa of course) should I use brown or golden flax...what did YOU use and did you have that bitterness?

Sorry, I don't have an answer, but I would like to know myself since I bought the ingredients to make the corn tortilla recipe this week.

Oh, did you use fresh corn or frozen corn? Alissa mentions in her book that the fresh corn gives it an unpleasant flavor.

Hi Allison,

It was fresh corn that was cut off of the cob, then frozen. Wonder if bagged frozen corn would have been better.

I don’t know, this is strange, the only thing i can think of is...
How long before hand did you grind the flax? Was it sour?
Did you add salt to the corn, that makes a difference?
Ive actually never used ground golden flax, just whole golden, i don’t know if that would give it any different taste?
Im thinking that the corn wasn’t sweet, maybe it was a bit bitter to begin with? Im really just guessing here, as ive never had that happen? There’s nothing else you added? Oh, did you add garlic, was the bulb sprouted, if so that can make dishes bitter instead of garlicky...

Thanks for the reply Alissa. It could have been the flax...wasn't freshly ground.

The garlic was fine...I'm going to try again using fresh brown seed. Keeping my fingers crossed!

There IS one particular part of the email that didn't involve the corn/flax issue that I'd like to hear from you on privately, though! ;)

I've done that particular recipe several times without a bitter taste. I've used whole golden linseeds. The endresult is always a very sweet tortilla.

Linseeds? Never heard of them and where do you buy them? Like sold in bulk bins too? Gosh, where have I been as I live in the health food store at least daily or more!

i think we call it golden flax seed, could be wrong though

I believe they (linseed and flax seed) are the same.

Rawkinlocks: Thanks for noticing .... I've been feeling down lately, and when I do I tend to isolate myself. BUT the good news is that I'm still going strong :) everyday isn't perfect but I'm getting there.

I have had this bitter taste before when mixing corn with flax. I think best is to use frozen corn with whole flax if you are trying to stay away from the bitterness and also make sure you are getting sweet frozen corn. I think it might have something to do with blending too because I know I have made soups from vegetables with bell peppers or other veggies that aren't bitter but then end up becoming bitter one way or another.

I'm not sure what that could be, but it's good to know I'm not the only one who gets this from time to time! ;)

The only thing is that the first time I tried I used a BLEND of both golden and brown flax and it had been in my cabinet...I'm not even sure how long...but it was probably old and had gone bad.

This time, I used fresh, brown flax seed and ground them up just today. Yeah, I turned it over and took a little taste and it was perfect! Now to figure on what I want to put IN them! :p

so just reading Allissas response, did she say not to grind the flaxseed? just use them whole? what is the difference in flavor between the 2 types anyone know?

I just made flax seed crackers from ground flax and like it a lot better.
