I had too many lemons last week so I put 2 in the blender with a small piece of ginger and made lemon crackers. They have now become my new favourites. I eat them with a mashed avacoda to which I have added a little herbamere spicy. I think I have become addicted to this combo. I have not used salt in anything for many many years so maybe it is the salt in the herbamere that has been calling me but the crackers are a definate one to add to your list.

Sounds great. Did you use ground flax seed? Sweetener?

hmm. i could make this tonight and put it in the dehydrator overnight.

do you peel the lemon? that might be a dumb question, but i'm asking anyways.

I used no sweetner just ground flax and used the lemmon whole but I have being meaning to ask a question about that for some time.
I have seen some recomendations that you thinly shave the outer peel of lemmons before using them but I hate to waste the flavour. Does anyone know which way is best and if there is something in the outer layer of an organic lemmon that makes it bad for us.
I have started sprinkling sesame seeds on top of my crackers after I have laid it out on the dehydrator and it makes them look really profesional.

i think the peeling would only be for non-organic lemons, so you are fine leaving the peel on. in fact, i think there are some good phytochemicals in there. To me, the peel is bitter so I wouldn't keep it on.
