I bought some Large green olives stuffed with Garlic. Does anyone know if olives are actually cooked or are they always raw? I need help. THANK YOU

If they come in a cann or jar they are most likely cooked.

Sometimes you can get truly raw olives at the deli section of your store.

But olives are soaked in brine for months, and then they are put into oil and herbs or vinegar to make them taste good.

I love olives and have many that I buy at the local deli, they bring them in just for me I'm sure, because I buy so many.

But, they are raw, so ask at your local deli but if they are in a jar or can, they are not raw.

hmm really? I thought sometimes the olives in jars were not cooked, only in brine. I guess it could be heated during vacuum sealing right?

yes, during the vacuum sealing the olives are exposed to heat.
Their are some internet sources of raw olives not vacuumed sealed though.

I buy my olives at the olive bars at whole foods and/or central market.
I assume they are raw.

Then olives we purchase are sundried with no oil. I hope they are raw because when I eat them they make me happy.
I've often wondered about olives.

How do we know what olives at the olive bar in stores are raw? Are all the olives there raw?

Hardly any olives are raw. They must say raw and unheated on the label to be really raw.

if they are in a jar that is sealed, they are not raw, if they are in the deli or a regular store I highly doubt they are raw.

It is best to buy them from a reputable place that will check this out for you, if they truly want your business, they will do this.

i buy raw olives from my deli at the local store, and they buy them in huge 5 gallon plastic jars that have screw top lids, but the lids are more like man hole covers, not regular screw lids. they do not pop when you open them, they are not sealed, they are just screwed on, and I buy pounds of these guys they are only $9.00 a pound and I love them, I will buy the whole jar sometimes too. I just keep the refridgerated and sometimes it is hard to find that much room in my fridge.

Anyway, if you tell them what you need and why they can help you. Unheated or not heated above 110 degrees. and all ingredients are not heated either, like the brine, and what is the salt they use, is it mined salt? or is it sea salt? because you don't want mined salt, it is deadly.

Anyway, you can find them, they are just a little expensive.

I think I will email Whole Foods and ask about their olives at their olive
bar...most are in brine and sea salt. A few are just in olive oil and sea salt.
It would be nice to know for sure.

I like these little black shriveled up olives in provencale herbs in the Whole Foods bulk section. I've asked if they were sundried but they guy did not know. They taste great - although they are a little salty, they can be soaked. They look like they were salted, herbed and left to dry out in the sun.

Thank you ladys so much. So it is okay that they are cured right? I read on the whole foods website that their Olives are soaked in brine and it goes through the entire hustory and how and why they cure olives. It is very interesting. Anyway they says that their olives are not pasturized. I guess we could never actually eat RAW olives becuase they have a chemical in them that has to be removed before you can eat them, that is why the go through the curing process. So does curing make them not RAW?

regards to my email inquiring about olives (I deleted my name & personal contact info):

raw food dieters!! I have followed up with Foodmatch, our number one
vendor for all olives, and found the following. All of the olives,
with
the exception of the Barnier brand, could possibly be subjected to a
form of light pasteurization depending on the harvest. This process is
used only in regards to the less ripe olives to prevent fermentation in
the packaging. It is not common, very sporadic, but does occur
nonetheless. There is not a certain olive or a certain batch, it is
just done as needed. I will have raw stickers made to specify the
Barnier olives. If in the meantime you need help finding which ones

So in regards to my letter, one may want to ask their local
Whole Foods Market to mark on the olive bar which ones
are raw and from Barnier too since this only mentions doing
so at the Plano Texas location. I'm sure it wouldn't be a problem
in most locations to do so, esp. in areas where raw vegan is becoming
well known (California, etc...)

Thank you Punky - that did help. Last time I went to the olive bar I asked the girl if they wre sundried and she said she didn't think so.

It would be a good idea for me to e-mail my local store just to make sure, they did look raw and taste raw, unlike the canned ones.
