well, i made them a couple days ago. took way longer to dehydrate than the approximate time she gives in her book. i did buy the dehydrator used, from a friend, so maybe I just need to get a brand new one.

anyway. i made it (without the carrot) and it had SUCH a strong aftertaste to it. it was definitely the corn that left that aftertaste. it tasted great when you'd first bite into it but i didn't like the aftertaste. it got a LITTLE bit better when i let it dehydrate another day.

i don't know if there's anything i can do to make it taste better. should i put the corn in some water and let it reach to 100 degrees or so and then shave it off to use it? i just didn't like that aftertaste at all.

Sadly, I too found this same undesirable aftertaste with the corn chips. I haven't been able to make a good batch of corn chips -- haven't even tried again after the first two tries.

I do like most of Alissa's recipes though; its just that those corn chips didn't agree with my tastes.

I'm going to watch this thread though to maybe pick up a tip. Thanks for the post.
