I am trying to prepare the Turnip Ravioli but I am not sure how to cut the Turnip. I have the spiral cutter and I know how to use it for spaghetti and to make spirals but I don't know how to make actual slices. If anyone can..Please help. And how long do you guys usually let it sit out? Thank you all.

For most spiral slicers, there is a little switch that allows you to cut in angel hair pasta and the the little teeth come up for that, switch the other way, and you will get the disc shape.
I typically make it and put it in the fridge, when I am ready to eat, I take it out and let is sit for about an 1 hour. I keep it no longer than 2 days because I can then pick up the turnip taste. Hope this helps
